SWEET HEAT BBQ SAUCE

Have you seen the ingredients list on the back of commercially-produced BBQ sauce? High-fructose corn syrup seems to be in each and every one, and many of the other ingredients would need a chemical engineer to figure out. Solution? Make your own!!! We loved this homemade sauce slathered on chicken parts and ribs that we baked in the oven. Generously brush on the sauce for the last few minutes of baking to get it caramelized and serve more at table-side.

Yield 2 cups.

Number Of Ingredients 11

Tomato paste - 1 small can
Ketchup - 1/3 cup
Liquid smoke - 3 drops
Lemon juice - 2 tbsp
Garlic powder - 1 tsp
Maple syrup - 2 tbsp
Salt and pepper - dashes
Chili sauce - 1/3 cup
Tobasco - 1 tsp
Cranberry and Pomegranate juice - 3/4 cup each
Corn starch - 2 tsp

Steps:

  • In a pan, add the Cranberry and Pom juice with starch. Put on a low boil until reduced and thickened. In a bowl, mix the tomato paste, ketchup, liquid smoke, lemon juice, maple syrup, some S&P, chili sauce, a few dashes of Tobasco. Let the reduction cool and slowly it to the bowl with the rest of the ingredients and mix into a paste. Keep the paste fairly thick by not adding all of the reduction if there's too much (if you're doing ribs, this would make a nice, sweet glaze before BBQ'ing).

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the sauce will be. Use fresh, ripe tomatoes, flavorful spices, and a good quality vinegar.
  • Don't be afraid to experiment: There are many different ways to make BBQ sauce. Experiment with different ingredients and flavor combinations to find a sauce that you love.
  • Cook the sauce low and slow: This will help the flavors to develop and mellow. Simmer the sauce for at least 30 minutes, or longer if you have the time.
  • Taste the sauce as you go: Adjust the seasonings to your liking. You may want to add more sweetness, heat, or smokiness.
  • Let the sauce cool before using: This will allow the flavors to meld together. You can also store the sauce in the refrigerator for up to 2 weeks.

Conclusion:

BBQ sauce is a versatile condiment that can be used on a variety of foods. It's perfect for ribs, chicken, pork, and burgers. It can also be used as a dipping sauce for fries, onion rings, and chicken nuggets. No matter how you use it, BBQ sauce is sure to add a delicious flavor to your food. So fire up the grill and get cooking!
