1/4 cup beer or beef broth
4 teaspoons ketchup
1 tablespoon brown sugar
2 bone-in center-cut pork loin chops (3/4 in. thick and 7 ounces each)
1/8 teaspoon salt
Dash pepper
1 tablespoon canola oil

Steps:

  • Mix beer, ketchup and brown sugar. Sprinkle pork chops with salt and pepper., In a large skillet, heat oil over medium heat; brown chops on both sides. Add beer mixture to pan; bring to a boil. Reduce heat; simmer, uncovered, until a thermometer inserted in pork reads 145°, 1-2 minutes. Remove chops from pan; keep warm., Return sauce to a boil; cook and stir until slightly thickened. Serve over pork.

Four 1 1/2-inch thick center cut bone in pork chops
Neely's Seasoning Salt, recipe follows
Sweet and Tangy Glaze, recipe follows
2 tablespoons kosher salt
1 tablespoon onion powder
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1/4 teaspoon celery seed
1/4 teaspoon cayenne pepper
1/4 teaspoon smoked paprika
1/4 cup apple cider vinegar
1/4 cup tablespoon real maple syrup
2 tablespoons ketchup
2 tablespoons Dijon mustard
1 dash Worcestershire sauce
1 dash hot pepper sauce (recommended: Tabasco)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the grill to medium-high heat.
  • Season the pork chops lightly on both sides with the Seasoning Salt. Remember, we aren't rubbing the chops.
  • Grill the chops for 5 to 7 minutes per side. Brush them with the Sweet and Tangy Glaze the last 5 minutes of grilling. Internal temperature should register 145 degrees F on an instant-read thermometer. Remove the chops from the grill to a serving platter and allow them to rest for 5 minutes before serving.
  • Mix the salt, onion powder, black pepper, garlic powder, celery seed, cayenne, and smoked paprika in a small bowl. Reserve a small amount for another use.
  • You can store the remaining Seasoning Salt in an airtight container for up to 6 months.
  • In a small bowl, mix together the apple cider vinegar, maple syrup, ketchup, mustard, Worcestershire, and hot sauce. Season with salt and pepper, to taste, and refrigerate if not using immediately.

1/2 cup tomato sauce
1/4 cup packed brown sugar

4 large boneless pork chops, about 3/4 - 1 inch thick
2 teaspoons extra virgin olive oil
1 tablespoon butter
1 (20 ounce) can pineapple chunks (Drained, Reserve juice)
2 tablespoons light brown sugar, packed
2 tablespoons cider vinegar
2 tablespoons cornstarch (As needed)
3 tablespoons warm water

Steps:

  • Trim pork chops of excess fat.
  • In a covered skillet, brown pork chops in butter and olive oil.
  • Drain and seperate pineapple chunks from juice, reserving juice.
  • Mix reserved juice, vinegar, and brown sugar until sugar is dissolved.
  • When pork chops have browned, add pineapple chunks and juice mixture to pan, cover, reduce heat to medium low and simmer until tender (about 30 minutes).
  • When chops are tender, remove from pan and cover to keep warm.
  • Mix corn starch with warm water and thicken remaining juice mixture, adjusting thickness as desired.
  • Plate chops and top with thickened sauce.

1/4 cup beef broth

Steps:

  • Sprinkle pork chops with salt and pepper. In a large nonstick skillet coated with nonstick cooking spray, brown chops for 3 minutes on each side over medium-high heat.
