2 (16 ounce) packages fully cooked kielbasa or Polish sausage, cut into 1/4-inch slices
1 (16 ounce) can jellied cranberry sauce
1 (13.25 ounce) can pineapple chunks in heavy syrup

Steps:

This is a very simple recipe I clipped from the newspaper. I make this with turkey kielbasa to lower the fat content and usually use Newcastle or Sam Adams as the beer. The recipe is intended as an appetizer but I see no reason why you couldn't serve it as a main dish with a side of rice and a veggie.

1 lb kielbasa
1 small onion, chopped
2 tablespoons butter
1 (12 ounce) can beer (darker beer gives more flavor)
1/3 cup honey
2 -3 tablespoons brown mustard or 2 -3 tablespoons Dijon mustard
1/2 teaspoon chili powder or 1/2 teaspoon favorite spices, to taste

Steps:

  • Slice kielbasa into 1/2-inch pieces.
  • In a large skillet, bring 1/2 can of beer to a slow boil and add kielbasa.
  • Cook until the beer is reduced by half, then add the remaining 6 ounces of beer.

1 small onion
2 bell peppers (any color)
1 (20 ounce) can chunk pineapple
1 tablespoon olive oil
1 (16 ounce) jar Kikkoman sweet and sour sauce (or homemade sweet and sour if you have more time and energy)

Steps:

  • In a large skillet heat oil and saute peppers and onions until softened over med heat.
  • Slice Kielbasa into diagonal slices and add to peppers and onions.

2 onions, sliced
2 tablespoons olive oil
1 tablespoon butter
salt, to taste

Steps:

  • In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add sausage slices, and cook until brown.
  • Remove sausage slices from skillet, and drain grease. Add remaining olive oil and butter to the skillet and heat over medium-low.
  • Spread sliced onions evenly over the bottom of the skillet. Stir onions to coat them with the oil and butter mixture.
  • Cook onions for about 20 minutes or until soft and brown. If onions seem to be cooking too quickly, lower heat to prevent them from burning.

1 (12-ounce) jar sauerkraut
1 large sweet onion, sliced in thin rounds
4 tablespoons whole grain Dijon mustard

4 slices Gruyere cheese
4 small crusty rolls

  • Mix together your mustard and jelly until well combine. Your condiment is now ready. In a cast iron skillet, brown up the kielbasa.
