Tips:
- Choose the right potatoes: Sweet Petite Potatoes are the best choice for this recipe, as they are small and have a sweet flavor. If you can't find Sweet Petite Potatoes, you can use regular sweet potatoes, but you will need to cut them into smaller pieces.
- Don't overcrowd the pan: When roasting the potatoes, make sure to spread them out in a single layer on the baking sheet. If you overcrowd the pan, the potatoes will steam instead of roast and will not get crispy.
- Roast the potatoes until they are tender: The potatoes are done roasting when they are tender when pierced with a fork. The roasting time will vary depending on the size of the potatoes, so check them often.
- Season the potatoes well: Before roasting, be sure to season the potatoes generously with salt, pepper, and other spices. This will help to enhance their flavor.
- Stuff the peppers immediately: Once the potatoes are roasted, stuff the peppers immediately. This will help to keep the potatoes warm and prevent them from drying out.
