I have never tried this recipe, but my mom got it from a co-worker. It is supposed to be really good, so we are going to try it soon.

Number Of Ingredients 10

6 medium sweet potatoes
1 cup water
1 cup sugar
6 ounces pecan halves
2 cups fresh cranberries (Ocean Spray) or 2 cups frozen cranberries (Ocean Spray)
1 large apple, thinly sliced
1/2 cup light brown sugar, firmly packed
1/4 teaspoon ground cinnamon
1/2 cup water (or orange juice)
1/4 cup butter

Steps:

  • Put sweet potatoes in a large saucepan.
  • Add enough water to cover the potatoes.
  • Bring to a boil; cover and cook until potatoes are'fork' tender.
  • Cool slightly.
  • Combine water, sugar, and cranberries in a medium saucepan.
  • Cook until cranberries pop.
  • Preheat oven to 350 degrees.
  • Grease a 13" X 9" X 2" baking dish.
  • Layer the sweet potatoes, apple slices, and cooked cranberries in baking dish.
  • Sprinkle with brown sugar, cinnamon, and butter.
  • Pour water (or orange juice) over top.
  • Last, the peacon halves on top.
  • Bake in oven for 30 minutes or until tender.

3-1/2 pounds sweet potatoes
2 large onions, peeled and halved
2 teaspoons olive oil
2 cups halved fresh or frozen cranberries
2/3 cup packed brown sugar
1/2 cup orange juice
2 tablespoons butter, melted
1 tablespoon grated orange zest
1/2 teaspoon each salt, ground ginger, cinnamon and nutmeg

Steps:

  • Place sweet potatoes and onions on a baking sheet; brush onions with oil. Bake, uncovered, at 400° for 50-60 minutes or just until tender. When cool enough to handle, peel and cube potatoes and dice onions; place in a large bowl., Combine the remaining ingredients; mix well. Gently stir into potato mixture. Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until heated through, stirring once.

Quick to make ! This recipe was given to me from an old friend that I knew when I was little. These old recipes are tried and true. Hey it has cranberries in it as well! Now what could be more perfect than that? I also have another version of this recipe posted a little different from this one with orange juice in it as well.

2 can(s) (15 oz each) sweet potatoes drained (could use fresh, par boil first)
1 c frozen cranberries or could use fresh
1/4 c coarsely ground pecans
1/4 c orange marmalade (warmed)

Steps:

  • 1. Preheat oven 350 degrees Place sweet potatoes in buttered 11x7x2 baking pan. Could use fresh cut up that you have par boiled.
  • 2. Spread with cranberries and pecans. Can use fresh cranberries as well. Spread marmalade on top. Cover until heated through ~ 25 minutes Serves 4-6 servings
  • 3. Can also put a brown sugar and oatmeal with melted butter topping on.

Tips:

  • For a crispier topping, use Panko breadcrumbs instead of regular breadcrumbs.
  • If you don't have fresh cranberries, you can use frozen cranberries instead. Just thaw them before using.
