5 cups sweet potatoes, peeled & cubed (about 2 lbs)
1/2 cup sweet onion, chopped
1/4 cup brown sugar, packed
1/4 cup orange juice, fresh
2 tablespoons canola oil

1 small red onion, very finely sliced

2 tablespoons white vinegar
1 tablespoon lemon juice
