SWEET POTATO, CHICKPEA AND EGGPLANT HOTPOT
A freebie recipe from a national supermarket chain, sound delicious. PLEASE NOTE they do suggest depending on your tastes you can increase or decrease the chilli (or I think leave the seeds in) or if you prefer you can use chili powder or dried chilli flakes. Serve with crusty bread.

Steps:
- Preheat the oven to 400 degrees F.
- Divide the potatoes and shallots between two 10-inch cast-iron skillets. Evenly drizzle with the olive oil and sprinkle with salt and pepper. Roast until the potatoes are cooked through, about 25 minutes.
- For the chickpeas: Lay the chickpeas out on a flat surface and dry them as much as you can using paper towels. In a small bowl, stir together the coriander, cumin, turmeric, cinnamon, cayenne and salt and pepper to taste. Set aside.
- In a 10-inch cast-iron skillet, heat the oil over medium heat until shimmering. Line a large plate with paper towels. Working in two batches, add the chickpeas to the skillet so they are in a single layer and cook, stirring frequently, until golden and crispy, 15 to 20 minutes.
- Use a slotted spoon to transfer the chickpeas to the prepared plate and add the spice mixture. Toss everything together until combined; this helps to bloom the spices while the chickpeas are still warm.
- Garnish the potatoes in the skillets with the chickpeas and finish with the mint.

SWEET POTATO AND CHICKPEA MASALA
I had some leftover bread that has a short shelf-life. So, I guess this spicy recipe goes well with it. Decided to add sweet potato to the original chana masala, as I didn't want that to go to waste, too. And it tasted good!

SWEET AND SOUR EGGPLANT, TOMATOES AND CHICKPEAS
This Lebanese dish is all about summer. Pomegranate molasses makes it both sweet and sour; you can find it in Middle Eastern markets. Serve the dish as a starter, a side or a main dish with grains.

Steps:
- Preheat the oven to 450 degrees. Line a baking sheet with foil, and oil it with olive oil. Lay the eggplant slices on top. Salt lightly and brush with olive oil. Place in the oven for 20 minutes until the eggplant is lightly browned and soft to the touch (the surface will be dry). Remove from the heat, and fold over the foil to make a packet around the eggplant slices. Allow them to soften and steam inside the foil for 15 minutes while you proceed with Step 2.
- Heat 2 tablespoons of the olive oil over medium heat in a large, heavy lidded casserole or skillet. Add the garlic. Cook just until fragrant, about 30 seconds. Stir in the tomatoes, salt to taste, sugar and pepper. Bring to a simmer, and simmer uncovered over medium heat for 10 to 15 minutes, stirring often, until the tomatoes have cooked down and smell very fragrant.
- Add the eggplant, molasses and chickpeas. Cover and simmer for another 20 to 30 minutes, stirring from time to time. The mixture should be thick and the eggplant should be very tender, melting into the mixture. Taste and adjust seasoning. Sprinkle on the parsley and/or mint, and serve. Alternately, allow to cool and serve warm or at room temperature.

Tips:
- When choosing sweet potatoes, look for ones that are firm and have smooth, unblemished skin.
- To easily remove the skin from eggplant, roast it whole in a preheated oven at 400°F for 20-25 minutes, or until the skin is wrinkled and charred.
- If you don't have a steamer basket, you can steam the sweet potatoes and eggplant by placing them in a colander set over a pot of boiling water, covered.
- To make the hotpot ahead of time, prepare the recipe up to the point of adding the chickpeas and eggplant. Let the mixture cool completely, then cover and refrigerate for up to 2 days. When ready to serve, reheat the mixture over medium heat until warmed through, then add the chickpeas and eggplant and cook according to the recipe instructions.
Conclusion:
This hearty and flavorful sweet potato, chickpea, and eggplant hotpot is a perfect meal for a cold winter day. It's packed with nutritious vegetables and protein, and it's easy to make ahead of time. So next time you're looking for a comforting and satisfying meal, give this recipe a try!
