Time 1h35m

Number Of Ingredients 6

3 to 4 sweet potatoes, peeled and sliced thinly
3/4 c sugar
2 c water
1 tsp vanilla extract
1 1/2 stick margarine, melted
1 box cake mix, yellow

Steps:

  • 1. Preheat oven to 300 degrees.
  • 2. Place potatoes in a 9x13" dish. Mix the sugar, water, vanilla and 1/2 stick margarine, in a measuring cup. Then pour over the sweet potatoes in baking dish.
  • 3. Sprinkle with 1 box dry cake mix, yellow or white. Then drizzle the other stick of margarine over the dry mix and bake for 60 to 75 minutes, until golden brown.
  • 4. Serve with ice cream.

Tips:

  • Use a good quality sweet potato. A sweet potato that is ripe and has a deep orange color will have the best flavor.
  • Do not peel the sweet potatoes. The skin of the sweet potatoes is packed with nutrients and it helps to keep the potatoes moist during baking.
  • Use a sharp knife to slice the sweet potatoes. This will help to prevent the potatoes from breaking apart.
  • Spread the sweet potatoes evenly in the baking dish. This will help to ensure that they cook evenly.
  • Do not overmix the cake batter. Overmixing the batter will make the cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean. This will take about 45 minutes.
  • Serve the cake warm or at room temperature. The cake can be served with whipped cream, ice cream, or a drizzle of maple syrup.

Conclusion:

Sweet potato dump cake is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up leftover sweet potatoes, and it is also a healthier alternative to traditional cakes. With its simple ingredients and easy-to-follow instructions, this cake is sure to be a hit with everyone who tries it.
