1-pound sweet potatoes, peeled and cut into 1/2-inch pieces
1 egg
1/4 cup packed brown sugar
2 tablespoons butter
1 cup all-purpose flour
1/3 cup fine dry bread crumbs
2 teaspoons baking powder
1/4 teaspoon salt
vegetable oil for deep-fat frying
YOUGURT-CHIVE DIPPING SAUCE:
1 (6-ounce) carton plain low-fat yogurt
1 tablespoon snipped fresh chives
1 clove garlic, minced
salt to taste
ground black pepper to taste

Steps:

  • FRITTERS: In a covered large saucepan cook sweet potatoes in enough boiling water to cover for 12 to 15 minutes or until very tender. Drain and cool slightly. In a food processor combine sweet potatoes, egg, brown sugar, and butter. Cover and process until smooth. In small bowl stir together flour, bread crumbs, baking powder, and salt. Add flour mixture to sweet potato mixture. Cover and process just until combined. In a deep-fat fryer or large heavy saucepan heat 1 inch oil to 350°F. For each fritter, drop 1 tablespoon of batter into hot oil. Fry, a few at a time, about 2 minutes or until fritters are golden, turning once. Remove with a slotted spoon and drain on paper towels. 2 medium Idaho potatoes, shredded on the large holes of a box grater
2 large eggs, slightly beaten
1/3 cup all-purpose flour
1/2 cup finely chopped scallions
1/4 cup finely chopped fresh dill
Zest of 1/2 lemon
Kosher salt and freshly ground black pepper
Olive oil, for cooking
1 cup Greek yogurt
2 tablespoons finely sliced fresh chives
1 tablespoon olive oil

Steps:

  • Set up your grill for even medium-high heat by building coals evenly on the bottom of the grill.
