I came up with this recipe when I promised to bring a potato salad to a picnic but had no regular potatoes on hand. 1 red apple, chopped (unpeeled, cored and coarsely chopped)
1/2 cup celery, chopped
1/2 cup red seedless grapes, halved
1/3 cup blue cheese, crumbled (optional)
3 tablespoons apple juice
2 tablespoons vegetable oil
1 tablespoon white wine vinegar
1 teaspoon white wine vinegar
1 teaspoon sugar
1/2 teaspoon salt

Steps:

  • Toast walnuts in oven at 350 degrees until golden, about 10 minutes. Cool. Place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl.
  • To make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.

Tips:

  • Choose the right sweet potatoes: For the best flavor and texture, select firm, medium-sized sweet potatoes that are free of blemishes and bruises.
  • Roast the sweet potatoes properly: To ensure they are cooked evenly and have a slightly caramelized exterior, roast the sweet potatoes at a high temperature (425°F or 220°C) for about 45 minutes, or until they are tender when pierced with a fork.
  • Use a variety of apples: For a complex flavor and texture, use a combination of sweet and tart apples, such as Honeycrisp, Granny Smith, and Braeburn.
  • Chop the ingredients evenly: To ensure that all the ingredients are evenly distributed and have a consistent texture, chop them into uniform pieces.
  • Use a creamy dressing: To balance the sweetness of the sweet potatoes and apples, use a creamy dressing made with mayonnaise, Greek yogurt, or sour cream. For a tangy twist, add a squeeze of lemon juice or a dollop of Dijon mustard.
  • Garnish with nuts and seeds: To add a crunchy texture and extra flavor, garnish the salad with chopped walnuts, pecans, or sunflower seeds.
