Maple Cinnamon Sweet Potatoes with Marshmallows and Pecans image

One of my hubby's favorite Thanksgiving sides! I make this for him several times a year though, because I think he'd have a fit if he had to wait a whole year to have them again! Enjoy, and Happy Thanksgiving from our table to yours! (photo from bing images)

3-4 *sweet potatoes (2 lbs.), the smaller ones with pointy ends (not yams, they are bigger with rounded ends and aren't nearly as good)
1/4 cup butter
1/4 cup maple syrup
1/3 cup dark brown sugar
1/4 tsp. cinnamon
1 tsp. vanilla
1/2 cup coarse chopped pecans
*mini marshmallows, about a half a bag, or as desired

Steps:

  • 1. Peel sweet potatoes, cut into small chunks, and add to a small pot with water to cover. Add 1 tsp. salt to water. Bring to a boil and boil for 20 minutes. Meanwhile that's boiling, in a small saucepan add rest of ingredients except marshmallows. Bring to a boil, stirring a little. Remove from heat and add vanilla. When potatoes are done, drain water and put potatoes into a 2 1/2 qt. casserole dish. (I use my oval white corningware one.)Sprinkle with pecans, then pour sauce over all. Toss GENTLY to coat. Arrange so that all the pieces are submerged as much as possible. Bake, uncovered, in 350 degree oven for 40 minutes. (I give the potatoes a gentle stir to turn them halfway through. Be careful doing this, sauce will be very hot and potatoes can fall apart easily. (Turn carefully.) Remove from oven and turn oven to low or medium broil. Top evenly with a nice layer of marshmallows completely covering. Place into oven and watch!! As soon as they start to poof up and brown remove them immediately or they will catch fire. If they burn...scrape top off into sink, retop with second half of bag of marshmallows and call do-overs! ;) :D Serve warm.

These individual sweet potatoes are great for Thanksgiving, or any time of year. I browned the butter to add a nutty flavor, plus added some cayenne pepper for a kick.

1 tablespoon olive oil
4 sweet potatoes
sea salt to taste
¼ cup unsalted butter
1 (8 ounce) package cream cheese, softened
½ teaspoon salt
1 pinch cayenne pepper, or more to taste
ground black pepper to taste
1 cup mini marshmallows

  • Slice potatoes in half lengthwise and scoop insides into a large bowl. Add browned butter, cream cheese, 1/2 teaspoon salt, cayenne pepper, and black pepper and mash using a potato masher until smooth. Tips for Perfect Sweet Potatoes and Marshmallows:

  • Choose the right potatoes: Look for firm, unblemished sweet potatoes that are about the same size. This will help them cook evenly.
  • Poke the potatoes: Before baking, poke the potatoes all over with a fork. This will help them cook faster and more evenly.
  • Microwave the potatoes: Microwaving the potatoes for a few minutes before baking will help them cook faster. Just be sure to prick the potatoes with a fork before microwaving.
  • Bake the potatoes: Bake the potatoes at a high temperature (400°F) for about an hour, or until they are tender. You can check for doneness by inserting a fork into the center of a potato. If the fork goes in easily, the potato is done.
  • Add the marshmallows: Once the potatoes are cooked, top them with marshmallows and return them to the oven until the marshmallows are melted and golden brown.
  • Serve immediately: Sweet potatoes and marshmallows are best served immediately. They can be topped with additional cinnamon, nutmeg, or butter, if desired.
