This cheese ball recipe is bound to be the star of your next cheese and crackers tray. The pineapple cheese ball is a classic old-school Kraft recipe. Its one of my go-to easy appetizer recipes and always one of my holiday appetizers.

16 ounces Cream cheese (softenend to room temperature)
1 cup Crushed pineapple (drain the liquid from a 20 ounce can of crushed pineapple to get 1 cup)
2 cups Pecans (crushed)
¼ cup Red bell pepper (finely diced)
1 to 2 Jalapeño peppers (finely diced)
2 tablespoons Shallot (finely diced)
⅓ cup Green onions (3 to 4 chopped)
1 teaspoon Worchestershire sauce
½ teaspoon kosher salt
¼ teaspoon black pepper

Steps:

  • Drain the pineapple. In a fine-mesh strainer, drain the 20-ounce can of pineapple. Use a spatula to press out as much water as possible.
  • Dice the veggies. Dice the bell pepper, jalapeño, shallot, and green onions.
  • Toast and chop the pecans. I like to toast the pecan because toasting them brings out their flavor. Chop them, if they aren't already chopped.
  • Mash the cream cheese. Use a fork to mash the softened cream cheese.
  • Add the remaining ingredients. Add the drained pineapple, the diced veggies, the Worchestershire sauce, salt, and pepper. Mix until everything is evenly combined.
  • Form and chill. Form the cheese ball mixture into a ball and wrap the whole thing in plastic wrap. Chill for at least 2 hours and up to overnight.
  • Add the crushed pecans. Roll the chilled pineapple cheese ball in crushed pecans.
  • Serve. Serve with round buttery crackers. I like Ritz and Wheat Thins.

2 (8 ounce) packages softened cream cheese
1 (8 ounce) can crushed pineapple, drained
2 cups finely chopped pecans, divided into two one cup portions
1/4 cup finely chopped green bell pepper
2 tablespoons grated onions or 2 tablespoons finely chopped green onions
2 teaspoons seasoning salt (I use Lawry's)
cracker, of choice

Steps:

  • Mix all the ingredients, using only 1 cup of the pecans listed and form into a ball.
  • Reserve 2nd cup of pecans for topping.
  • Refrigerate overnight.
  • Before serving, roll cheese ball in reserved cup of pecans.
  • Serve with crackers of choice.

2 cups raw pecan halves
2 (8-ounce) packages reduced fat cream cheese (softened to room temperature)
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
Pinch cayenne pepper
1 (8-ounce) can crushed pineapple
1 small red bell pepper (finely chopped (about 1 cup))
1/4 cup minced green onions (plus additional for garnish)
Crackers ((our family loves Triscuits or Ritz))
Toasted baguette slices

Steps:

  • Toast the pecans: preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake until toasted and fragrant, about 8 to 10 minutes, stirring once halfway through. DO NOT WALK AWAY. Nuts love to burn at the last second. Let cool, then chop go for a medium chop, a little bit finer than rough chopped (but they certainly don't need to be microscopic pieces).
  • In a large mixing bowl, beat the cream cheese with the garlic powder, salt, and cayenne until smooth and combined.
  • By hand, stir in the pineapple, bell pepper, and green onion.
  • Add half of the chopped pecans.
  • Lay a large sheet of plastic wrap on the counter. Scrape the cheese pineapple mixture into the center in as globe-like of a mound as you can. It will not be a perfect sphere at this point.
  • Wrap the edges of the plastic around it to seal and encourage it to form a round ball. Place the wrapped cream cheese in a bowl and refrigerate for at least 1 hour or overnight.
  • When ready to serve, remove the chilled cheese ball from the refrigerator. Place the chopped pecans on a plate. (I find it's easiest to use a plate with edges that curve up a little. A pie dish works well too.) Unwrap the cheese ball and place it on the plate with the pecans, coating well. The cheese ball won't roll like a real ball. Gently lift and turn it, patting the pecans all over the outside. Carefully transfer it to a serving plate. Serve with crackers or baguette slices and a sprinkle of additional green onion for garnish.
