1/4 c chopped onion
1/4 c chopped green bell pepper
2 clove garlic, minced
1/2 c beer
1/2 c pineapple juice reserved from pineapple
1/2 c crushed pineapple
2 Tbsp brown sugar
1 can(s) (small size) tomato paste
1 Tbsp vinegar
2 Tbsp sweet asian chili sauce
1/4 tsp cayenne pepper
1 Tbsp olive oil

Steps:

  • 1. In a skillet, cook the onion and green pepper in the olive oil until tender- about 5 mins. Add pineapple and let cook on medium-low. In a separate bowl, whisk the beer and pineapple juice together then stir in brown sugar, tomato paste, vinegar, chili sauce and cayenne pepper. Stir into the vegetable/pineapple mixture and let simmer til thickened a bit. Remove from heat, let stand for 5 mins and then process in a food processor or blender til as smooth as u like.

Tips:

  • Use ripe tomatoes. This will give your sauce a sweeter, more flavorful taste.
  • Roast the tomatoes before using them. This concentrates their flavor and makes them even sweeter.
  • Use a variety of peppers. This will give your sauce a more complex flavor. Some good choices include bell peppers, poblano peppers, and jalapeƱo peppers.
  • Add some spices to your sauce. This will give it a more interesting flavor. Some good choices include chili powder, cumin, and smoked paprika.
  • Let your sauce simmer for a while. This will help the flavors to meld together and develop.
  • Taste your sauce as you go and adjust the seasonings as needed. You want your sauce to be sweet, sour, and tangy, with a little bit of heat.

Conclusion:

Sweet and sour BBQ sauce is a delicious and versatile condiment that can be used on a variety of dishes. It's perfect for chicken, pork, beef, or fish. It can also be used as a dipping sauce for vegetables, egg rolls, or spring rolls. No matter how you use it, sweet and sour BBQ sauce is sure to add a burst of flavor to your meal.
