OAT BRAN MUFFINS
This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

SWEET & SPEEDY BREAKFAST OAT BRAN MUFFIN (MICROWAVE)
Stir and pop into the microwave for an easy, healthy breakfast! I mix it up, microwave, and eat it straight out of a ceramic mug. The batter sticks a little, but to wash cleanly, pour in hot water and soap and let sit until you do the dishes! I was inspired by *Pixie* 's South Beach Muffin (http://www.recipezaar.com/South-Beach-Muffin-263983) but I didn't have the baking powder, yogurt, or flaxseed, so I improvised. Change up the recipe by adding in raisins, nuts, and other flavorings (almond extract, etc)

Tips:
1. Microwave Cooking: Microwave cooking is a convenient and time-saving method for making oat bran muffins. Make sure to adjust the cooking time according to your microwave's power and the number of muffins you are making. 2. Measuring Ingredients: Use accurate measuring cups and spoons to ensure the correct proportions of ingredients. This will help achieve the desired texture and flavor of the muffins. 3. Mixing Ingredients: Mix the dry ingredients (oat bran, flour, sugar, baking powder, and salt) in a separate bowl from the wet ingredients (milk, egg, oil, and vanilla extract). Combine the wet and dry ingredients gently until just combined. Overmixing can result in tough muffins. 4. Baking Time: The baking time can vary depending on the size of your muffin cups and the power of your microwave. Start with the recommended time in the recipe and adjust if needed. Insert a toothpick into the center of a muffin; if it comes out clean, the muffins are done. 5. Cooling and Storing: Allow the muffins to cool slightly in the microwave before transferring them to a wire rack to cool completely. Store the muffins in an airtight container at room temperature for up to 3 days, or freeze them for longer storage. Conclusion:
Sweet Speedy Breakfast Oat Bran Muffin Microwave is a quick and easy recipe that yields delicious and nutritious muffins. By following these tips, you can ensure perfect muffins every time.
