2 tablespoons vegetable oil
1/2 pound shiitake mushrooms, stems discarded and caps sliced
Kosher salt
1/2 cup panko (Japanese bread crumbs)
3/4 cup Parmigiano-Reggiano cheese
10 large eggs
1/2 teaspoon cayenne pepper
2 1/2 pounds Swiss chard, stems discarded and leaves thinly sliced

Steps:

  • Preheat the oven to 350° and butter a shallow 9-by-13-inch ceramic baking dish. In a large skillet, heat the oil until shimmering. Add the mushrooms and cook over high heat, turning once, until golden and crisp, about 5 minutes. Season with salt and transfer the mushrooms to a paper towel-lined plate. In a small bowl, toss the panko with 1/4 cup of the cheese. In a large bowl, whisk the eggs with the cayenne, 2 teaspoons of salt and 1/2 cup of the cheese. Stir in the Swiss chard and mushrooms. Scrape the mixture into the prepared dish and bake for about 20 minutes, until the eggs are just set around the edges. Sprinkle the panko on top and bake for about 10 minutes longer, until the casserole is set and the topping is lightly browned. Let stand for 10 minutes before serving. MAKE AHEAD The casserole can stand at room temperature for up to 2 hours.

Tips:

  • Prep your ingredients: Before you start cooking, wash and chop the Swiss chard, shiitake mushrooms, and onion. This will save you time and make the cooking process smoother.
  • Use a large skillet: A large skillet will give the ingredients plenty of room to cook evenly and prevent them from steaming.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the ingredients will not cook evenly. Cook the ingredients in batches if necessary.
  • Season to taste: Taste the casserole before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder.
  • Serve immediately: This casserole is best served immediately after it is made. The Swiss chard will wilt and become mushy if it sits for too long.

The casserole is also easy to make and can be tailored to your own taste preferences.
