Tips:

  • Use fresh, high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. When possible, use organic or locally-sourced ingredients.
  • Don't be afraid to experiment: Sichuan cuisine is all about bold flavors and unexpected combinations. Feel free to adjust the ingredients and proportions to suit your own taste.
  • Use a wok: A wok is the traditional Chinese cooking vessel for stir-fries. It allows you to cook food quickly and evenly over high heat.
  • Heat your wok properly: Before you start cooking, make sure your wok is nice and hot. This will help prevent the food from sticking.
  • Use a little oil: Sichuan cuisine typically uses a lot of oil, but you can reduce the amount if you're watching your calories.
  • Add the ingredients in the right order: The order in which you add the ingredients to the wok is important. Generally, you'll start with the aromatics (such as garlic and ginger), then add the meat, and finally the vegetables.
  • Stir-fry quickly: Sichuan stir-fries are cooked quickly over high heat. Use a spatula to toss and stir the ingredients constantly so that they cook evenly.
  • Season to taste: Once the dish is cooked, taste it and adjust the seasoning as needed. You may want to add more salt, pepper, or Sichuan peppercorns.
