¾ cup water
1 cube chicken bouillon
¼ cup tahini (sesame paste)
2 tablespoons soy sauce
1 tablespoon honey
1 clove garlic, minced
2 teaspoons minced fresh ginger
2 teaspoons butter, or as needed
2 skinless, boneless chicken breast halves, cut into cubes, or more to taste
2 tablespoons all-purpose flour, or as needed
1 teaspoon sesame seeds, or as desired

Steps:

  • Bring water and bouillon cube to a boil in a pot until bouillon is dissolved; decrease heat to low. Whisk tahini, soy sauce, honey, garlic, and ginger into bouillon mixture until smooth. Keep sauce warm over low heat.
  • Heat butter in a skillet over medium heat; cook and stir chicken until no longer pink in the center, 5 to 10 minutes.
  • Whisk flour into tahini sauce until thickened, 2 to 3 minutes. Add cooked chicken to tahini sauce and toss to coat.

1 1/2 teaspoons ground cumin
1 1/2 teaspoons paprika
1/4 teaspoon ground allspice
1/4 teaspoon chili powder
1 clove garlic, grated
6 pieces skinned and deboned chicken thighs, cut into 1 inch strips (about 1 1/2 pounds)
3 1/2 tablespoons extra-virgin olive oil
Kosher salt
2 tablespoons quality olive oil
2 teaspoons apple cider vinegar or white balsamic vinegar
1 teaspoon dried oregano
2 Roma tomatoes, chopped
1 English cucumber, chopped
1 clove garlic, grated
1 lemon, juiced
1/2 small red onion, minced
Handful fresh parsley leaves, chopped

Steps:

  • For the shawarma: Mix the cumin, paprika, allspice, chili powder and garlic together. Place the chicken inside a resealable plastic bag with the olive oil. Add the spice mixture and rub in until fully incorporated. Seal that bag and place it into the refrigerator to marinate for at least 30 minutes.
  • Preheat the grill to medium-high heat.
  • After marinating, use the skewers to pierce the pieces of chicken through the center. Slide the pieces down leaving enough room for you to hold the skewer, about 3 pieces of chicken per skewer. Continue this process until chicken is all skewered. Sprinkle with salt and place on a hot oiled grill top for 4 minutes per side, or 8 minutes total.
  • For the relish: Mix the oil, vinegar, oregano, tomatoes, cucumbers, garlic, lemon juice, onion, parsley and some salt and pepper.
  • For the tahini sauce: In a medium bowl, combine the tahini paste, olive oil, lemon juice and 1/4 cup water. Season with salt.
  • To serve, fill the pitas with the grilled chicken and serve with the cucumber relish and tahini sauce.

ROAST CHICKEN WITH ASPARAGUS AND TAHINI SAUCE

4 skinless boneless chicken breast halves (3 to 4 lb total)

1/3 cup water
2 tablespoons fresh lemon juice
1 teaspoon sugar
1 garlic clove, minced

Steps:

  • Put oven racks in middle and lower thirds of oven and preheat oven to 450°F.
  • Toss asparagus with 1 tablespoon oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a 15- by 10-inch shallow baking pan. Roast on bottom rack, shaking pan once or twice, until just tender, about 10 minutes.
  • Meanwhile, pat chicken dry and sprinkle all over with 1/2 teaspoon salt and remaining 1/4 teaspoon pepper. Heat remaining 2 tablespoons oil in a 12-inch heavy ovenproof skillet (not nonstick) over moderately high heat until hot but not smoking, then brown chicken, turning over once, until golden, about 6 minutes total. Transfer skillet to middle of oven and roast until just cooked through, about 5 minutes.
  • While chicken roasts, purée tahini, water, lemon juice, sugar, garlic, and remaining 1/2 teaspoon salt in a blender until smooth, about 1 minute. (Add more water if sauce is too thick.)
  • Serve chicken and asparagus drizzled with some of sauce and with remaining sauce on the side.

Steps:

  • For tahini yogurt:
  • Combine lemon juice, Baharat Seasoning, and garlic in medium bowl; stir to blend. Let stand 5 minutes. Whisk in yogurt and tahini. Season tahini yogurt to taste with salt. DO AHEAD: Can be made up to 2 hours ahead. Let stand at room temperature.
  • For pomegranate relish:
  • Mix all ingredients in medium bowl. Season to taste with salt and freshly ground black pepper. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
  • For chicken:
  • Whisk first 4 ingredients in large bowl. Add chicken. Sprinkle with salt and pepper. Marinate at room temperature at least 1 hour and up to 2 hours.
  • Preheat broiler. Thread 6 chicken pieces onto each skewer. Sprinkle with salt and pepper. Place on small rimmed baking sheet. Broil chicken until cooked through, 5 to 6 minutes per side. Arrange kebabs on platter. Serve with tahini yogurt, pomegranate relish, and warm pita breads.

1/4 cup olive oil
1/2 teaspoon hot paprika
1/2 teaspoon sweet paprika
1/2 teaspoon chili powder

4 chicken breast halves, on the bone skin on

1/2 cup tahini
1 cup plain yogurt
1/4 cup fresh lemon juice
1/4 cup cilantro, chopped
2 tablespoons minced garlic

salt & freshly ground black pepper, to taste
cayenne, to taste

Steps:

  • Preheat the oven to 425 degrees.
  • Mix 2 tablespoons of the olive oil and the spices in a small bowl. Put the chicken and spices in a mixing bowl and toss. Season with salt and pepper to taste. Put the remaining 2 tablespoons olive oil in an ovenproof skillet over medium heat.
  • Brown the chicken 1½ to 2 minutes on the meaty side, then turn and brown for 3 to 4 minutes on the skin side. Pour out any excess oil. Transfer the skillet to the oven and cook for about 30 minutes, or until the chicken is just cooked through. Serve with Tahini-Yogurt Sauce.
  • Tahini-Yoghurt Sauce:.
  • Mix tahini, yogurt, lemon juice, cilantro, garlic, and honey together in a bowl. Season with salt, pepper, and cayenne to taste. Serve at room temperature. Refrigerate if not using immediately, but this sauce should not be kept more than 24 hours.

  • Chicken and assembly Preheat oven to 400°. Toss chicken, onions, garlic, lemon, sumac, allspice, cinnamon, broth, and 1/4 cup oil in a large resealable plastic bag; season with salt and pepper. Chill at least 2 hours.

2 pounds skinless boneless chicken breasts, cut into 1-inch cubes
Vegetable oil or nonstick cooking spray, for broiling pan
1/2 cup tahini paste
2 cloves garlic
1/2 teaspoon salt
2 1/2 tablespoons lemon juice
1/2 cup (packed) flat-leaf parsley leaves

Steps:

  • For the chicken: In a blender combine the ginger, garlic, teaspoon salt, paprika, lemon juice and hot sauce. Blend on high speed until smooth, about 1 minute. With the motor running, add olive oil and blend until combined. Place chicken in a bowl, add marinade and mix well. Cover and refrigerate overnight.
  • For the tahini sauce: In a blender combine tahini, garlic, salt, lemon juice, and 1/4 cup water. Blend until smooth, adding more water if needed to bring to a syrupy consistency. Add parsley and blend again until finely chopped. Add salt to taste. May be served immediately or covered and refrigerated overnight.
  • To finish and serve: Place 6 to 8 six-inch bamboo skewers in a bowl of water to soak briefly. Heat broiler and lightly oil a broiling pan, or prepare grill. Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Rub chicken with oil in a shallow baking pan (1 inch deep) and sprinkle with pepper and 1 teaspoon salt. Roast chicken until just cooked through, 40 to 45 minutes.
  • While chicken roasts, blend tahini, water, lemon juice, garlic, sugar, and remaining teaspoon salt in a blender until smooth.

One of my favorite spice blends available at my local market is billed simply as tandoori powder. Borrowing inspiration from the famous Indian chicken dish bearing the name tandoori, this creation is bright, aromatic, pleasantly spicy and seriously amazing on everything from meat to fish to tofu to vegetables. If your market doesn't have this available (or if you're one of these awesome people who'd rather get all DIY on it), make some of your own and keep it close by - you'll want to put it on everything.

Tandoori Powder:
3 tablespoons ground coriander
3 tablespoons ground cumin
1 tablespoon smoked paprika
1 tablespoon ground turmeric
2 teaspoons chili powder

1 tablespoon kosher salt
2 teaspoons garam masala or curry powder
Tahini Dressing:
3 tablespoons tahini
Juice of 1 lemon
3 tablespoons extra-virgin olive oil
1 finely grated clove garlic

3 to 4 tablespoons warm water
1 1/2 pounds chicken tenders (or boneless, skinless chicken breasts cut into strips)
3 tablespoons tandoori powder
2 tablespoons vegetable or canola oil
4 to 5 medium carrots, peeled
1/4 cup tahini dressing
3 tablespoons roughly torn parsley and/or cilantro leaves
3 tablespoons toasted cashews, chopped (optional)

Steps:

  • For the tandoori powder, combine all the ingredients and store in an airtight container at room temperature (the above recipe makes about 3/4 cup). For the tahini dressing, combine all the ingredients and adjust the dressing's consistency with more or less water and store, covered, in the refrigerator for up to 1 week (makes about 3/4 cup).
  • Preheat a gas grill to high (or prepare the coals for a charcoal grill). In a large mixing bowl, toss the chicken with the tandoori powder and oil to evenly coat the meat. Arrange the chicken on the grate and grill, turning as needed, until cooked through, about 8 minutes total. Move the chicken to a plate.
  • While the chicken is cooking, cut the carrots into ribbons by running a vegetable peeler straight down each carrot from stem to root. After you've cut about halfway through the carrot, flip it over to cut down the other side.
  • Divide the carrot ribbons among the serving plates and drizzle each with about 1 tablespoon tahini dressing. Garnish each salad with some herbs and cashews (if using) and serve with the grilled chicken.

5 tablespoons olive oil
1 medium yellow onion, grated
1½ teaspoons tomato paste
1½ teaspoons water, plus more for soaking
1½ teaspoons cumin seeds, coarsely ground
2 boneless, skinless chicken breasts, halved crosswise
1 teaspoon minced garlic
2 teaspoons lemon juice
¼ cup Greek yogurt
¼ cup tahini
Salt
2 tablespoons dried currants
2 tablespoons dried cherries
¼ cup shelled pistachios, lightly toasted and coarsely chopped
¼ cup pine nuts, lightly toasted and coarsely chopped
3 tablespoons chopped cilantro

Steps:

  • 1. In a large bowl, combine 1 tablespoon oil with onions, tomato paste, 1½ teaspoons water and cumin. Add chicken, toss to coat and let marinate 10 minutes. In a small bowl, combine garlic with lemon juice and let marinate 10 minutes. Whisk yogurt, 1 tablespoon oil and tahini into marinated garlic until smooth. Season with salt. 2. In a second small bowl, soak dried fruits in hot water until swollen, 3 minutes. Drain fruit and wipe bowl clean. Return fruit to bowl and stir in nuts, 1 tablespoon oil and cilantro. 3. Brush marinade off chicken and season with salt. Slick a large pan with remaining oil and set over medium-high heat. Once oil is hot, sear chicken until golden and cooked through, about 5 minutes per side. To serve, place dollops of yogurt on four plates, top with chicken and spoon nut-fruit mixture over top.
