TAMRA'S LEMON ARTICHOKE PESTO

Tamra's Lemon Artichoke Pesto image

This is from another web site and I made it for dinner last night served on whole wheat pasta. Very easy and delicious. Probably would be great as an appetizer on Triscuits or..The recipe poster said she freezes the leftover pesto in ice trays. I don't love a lot of garlic so I only used 3 medium cloves, but I will post it the way I found it. There is no cook time.

Tips:

  • Choose fresh, ripe artichokes. Look for artichokes that are heavy for their size, with tightly closed leaves and no signs of bruising or discoloration.
  • Cook the artichokes until they are tender. You can boil, steam, or roast artichokes. The cooking time will vary depending on the method you use, but the artichokes should be tender enough to easily remove the leaves.
  • Use a variety of herbs and spices in your pesto. This will give the pesto a more complex flavor. Some good options include basil, parsley, cilantro, garlic, lemon zest, and pine nuts.
  • Adjust the consistency of the pesto to your liking. If you want a thinner pesto, add more olive oil. If you want a thicker pesto, add more grated Parmesan cheese.
  • Use the pesto as a condiment or marinade. Pesto is a great way to add flavor to grilled meats, fish, or vegetables. It can also be used as a dip for bread or crackers.

Conclusion:

Tamra's Lemon Artichoke Pesto is a delicious and versatile condiment that can be used in a variety of dishes. It is easy to make and can be tailored to your own personal taste. Whether you use it as a marinade, a dip, or a spread, this pesto is sure to please everyone at your table.
