2 tablespoons freshly squeezed lime juice
2 tablespoons nonfat sour cream

2 green or orange peppers, deseeded and cubed
1 tbsp olive oil
320g cherry tomatoes
200g wholewheat giant couscous
7g fresh coriander, roughly chopped
15g flat-leaf parsley, roughly chopped
1 garlic clove
1 green chilli, deseeded
½ tsp cumin
1 tbsp apple cider vinegar

40g pine nuts, lightly toasted

  • Heat the oven to 200C/180C fan/gas 6. Add 2 tbsp water, then blitz with a hand blender until smooth or use a small food processor.
