SPICY GARLIC POTATOES AND ZUCCHINI

Spicy Garlic Potatoes and Zucchini image

Categories     Garlic     Potato     Side     Sauté     Vegetarian     Zucchini     Summer     Gourmet     Sugar Conscious     Vegan     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 6 servings

Number Of Ingredients 6

2 pounds small yellow-fleshed potatoes (preferably fingerling)
5 large garlic cloves, smashed with flat side of a large knife
3 1/2 tablespoons vegetable oil
3/4 teaspoon dried hot red pepper flakes
1 pound baby zucchini, halved lengthwise
1/2 teaspoon salt

Steps:

  • Cover potatoes with salted cold water by 1 inch in a 4-quart saucepan, then simmer, uncovered, until just tender, 20 to 25 minutes. Drain in a colander and let stand until cool enough to handle, about 15 minutes. Peel potatoes and halve lengthwise.
  • Cook garlic in oil in a 12-inch nonstick skillet over moderate heat, stirring, until garlic is pale golden, about 2 minutes. Discard garlic, then stir potatoes and red pepper flakes into oil and sauté over moderately high heat, stirring occasionally, until potatoes begin to turn golden brown, 8 to 10 minutes.
  • While sautéing potatoes, cook zucchini in a pot of boiling salted water until just tender, 2 to 3 minutes, then drain in a colander.
  • Transfer potatoes with a slotted spoon to a bowl, then add zucchini to oil in skillet and sauté over moderately high heat, stirring, until hot, about 1 minute. Return potatoes to skillet and stir in salt.

Tips:

  • Choose the right zucchini: Look for firm, blemish-free zucchini that are about 6-8 inches long. Avoid zucchini that are too large, as they may be tough and seedy.
  • Slice the zucchini evenly: This will help them cook evenly. Cut the zucchini into 1/4-inch thick slices.
  • Don't overcrowd the pan: If you overcrowd the pan, the zucchini will steam instead of sautéing. Cook the zucchini in batches if necessary.
  • Cook the zucchini over medium-high heat: This will help them brown and caramelize. Don't stir the zucchini too often, as this will prevent them from browning.
  • Season the zucchini to taste: Add salt, pepper, and other seasonings to taste. You can also add herbs, such as basil or oregano, or a squeeze of lemon juice.
  • Serve the zucchini immediately: Zucchini is best served hot or warm. It can be served as a side dish or as a main course with a side of rice or pasta.

Conclusion:

Sautéed zucchini is a quick, easy, and delicious side dish that can be enjoyed by people of all ages. With its bright flavor and vibrant color, zucchini is a great way to add some healthy vegetables to your diet. So next time you're looking for a simple and tasty side dish, give sautéed zucchini a try. You won't be disappointed!
