I got this recipe from an old neighbor years ago...She was grilling on her deck with this chicken and it drove all of us neighbors over to find out what it was, that is how good this marinade smells. It makes a lot but you can cut it in half.

Tips:

  • Use fresh tarragon: Fresh tarragon has a more intense flavor than dried tarragon, so it's best to use fresh herbs whenever possible.
  • Don't over-marinate the chicken: Marinating the chicken for too long can make it tough. 30 minutes is usually the maximum amount of time you should marinate chicken in a tarragon marinade.
  • Use a variety of herbs and spices: In addition to tarragon, you can also add other herbs and spices to your marinade, such as thyme, rosemary, garlic, and onion powder.
  • Use a good quality olive oil: The olive oil you use in your marinade will make a big difference in the flavor of the chicken. Choose a high-quality extra virgin olive oil.
  • Let the chicken rest before cooking: After you've marinated the chicken, let it rest for at least 30 minutes before cooking. This will help the flavors to meld and the chicken to cook more evenly.

Conclusion:

Tarragon chicken is a delicious and easy-to-make dish that's perfect for a weeknight meal. By following these tips, you can make sure that your tarragon chicken is moist, flavorful, and cooked to perfection.
