TATER DOGS
This is a great gluten free substite for corn dogs, which is something that my 10 year old really misses. My other children love it as well. Prep is a little time consuming, but very worth it.

"When we were raising our six children, they took turns cooking supper," recounts Margaret Pienta of Abilene, Texas. "Every time my oldest son's turn came around, we knew what he'd be serving...this great-tasting favorite of his. Now we make it for our grandkids."

Steps:
- 1. This is a spicy potato and onion mixture that when placed on a roll with a hot dog/sausage is super tasty so adjust seasonings as you like. Start by boiling the potatoes until just tender, then drain.
- 2. Meanwhile saute the onions in the oil. When they are just tender add the roasted garlic salt, crushed red pepper flakes, granulated garlic, parsley and pepper.
- 3. Mix the seasonings together with the onions, then add the drained potatoes.
- 4. Split, then saute or grill the hot dogs (or sausages).
- 5. If using rolls, slice in half, slather with mustard and add 2 hot dogs, then top with potato onion mixture. If using pita pockets you can eat them as they are or heat the pitas first. Cut the top off and then heat carefully in an oven till slightly crispy. Then, slather mustard, add the dogs, add the potatoes and enjoy the flavor explosion. I enjoy these Tater Dogs in pita pockets as left overs. Just fill the pockets (not heated) and wrap in foil. Then when you are ready to eat, bake them in the oven for about 20 - 25 minutes for a crispy delicious hot sandwich!
Tips:
- Choose the right type of potato. Russet potatoes are the best choice for tater dogs, as they are firm and hold their shape well. You can also use Yukon Gold potatoes, but they may be a bit more difficult to work with.
- Cook the potatoes until they are tender. You can boil, bake, or microwave the potatoes until they are soft enough to mash. If you are boiling the potatoes, be sure to drain them well before mashing.
- Mash the potatoes until they are smooth. Use a potato masher or a food processor to mash the potatoes until they are smooth and creamy. You can also add a little milk or butter to help make the mashed potatoes smoother.
- Season the mashed potatoes. Add salt, pepper, and other seasonings to taste. You can also add chopped herbs or grated cheese to the mashed potatoes.
- Form the tater dogs. Use a spoon or your hands to form the mashed potatoes into hot dog shapes. You can also use a hot dog mold to make the tater dogs uniform in size and shape.
- Coat the tater dogs in bread crumbs. Roll the tater dogs in bread crumbs until they are evenly coated. You can use plain bread crumbs or seasoned bread crumbs.
- Fry the tater dogs. Heat oil in a large skillet over medium heat. Fry the tater dogs until they are golden brown and crispy. You can also bake the tater dogs in a preheated oven at 400 degrees Fahrenheit for 15-20 minutes.
- Serve the tater dogs. Serve the tater dogs with your favorite dipping sauce, such as ketchup, mustard, or ranch dressing. You can also top the tater dogs with cheese, chili, or other toppings.
Conclusion:
Tater dogs are a fun and easy way to enjoy potatoes. They are perfect for parties, potlucks, or a quick and easy meal. With so many different ways to make tater dogs, you can be sure to find a recipe that you and your family will love.
