TOASTER OVEN BAKED POTATO
Making baked potatoes in the toaster oven is an easy and delicious way to cook this classic side dish. The skin turns out crispy and the inside is soft and fluffy. If your toaster oven has a convection setting, this baked potato recipe is super quick

Steps:
- Preheat the toaster oven to 400° on the bake setting. Then set the timer for the number of minutes needed, see the grid above. It should be between 35-75 minutes based on the size. If using the convection setting, set it for 375°. Then set the timer for the number of minutes needed, see the grid above. It should be between 30-60 minutes based on the size.
- Scrub each of your potatoes with water and use a brush if needed. Dry them thoroughly.
- Once the potatoes are dry, using a pastry brush, coat the skins with olive oil. Next, sprinkle on a bit of salt. The last step is to poke each potato two times with a fork.
- Once the toaster oven is preheated, add the potatoes to the rack in the middle of the oven. No need to move or flip them. Just let them bake.
- To test for doneness - The first step is to give it a good squeeze. Carefully open the toaster oven door and with an oven mitt on your hand, give the potato a gentle squeeze. Try not to break the skin open. If it feels firm and has very little give, let it keep cooking. If it does give and feels soft, it may be ready.Once the potato does have a good give to it, you can then double-check it using a sharp skinny knife. Insert it into the middle of the potato and if it slides in easily, it is ready.
- Cut and open as the video above shows. Then top with your favorite toppings. See above for some of my favorites.
- If you have leftovers, baked potatoes store easily in the refrigerator. Wrap each in foil and store in the refrigerator for up to 5 days. When ready to eat, remove from the foil and place on a microwave-safe plate. Heat in the microwave for 3-5 minutes or until hot. It will depend on the size of your potato. To heat in the toaster oven, set for 400° and heat for 10 minutes.

Steps:
- For the potatoes: Preheat the oven to 400 degrees F. Rub the potatoes all over with the oil. Season the skins with salt and pepper and place on a baking sheet. Bake until tender inside, about 1 hour. Set aside until cool enough to handle, but still warm. Leave the oven on.
- For the yogurt mixture. While the potatoes are baking, in a medium bowl, stir together the yogurt, cilantro, dill, mint, parsley and scallions. Taste and season with salt and pepper. Set aside.
- For the filling: Slice each potato in half lengthwise. Use a spoon to gently hollow out each half, leaving about 1/4 inch of flesh around the border and bottom. Mash the potato flesh in a large bowl with a fork or potato masher. Add the melted butter, half of the cream or milk, 1 cup of the cheese blend, 1/2 cup of the yogurt mixture, and salt and pepper to taste. Reserve the rest of the yogurt mixture for serving. Mix to combine, adding more cream or milk to make smooth. Taste and season with salt and pepper if needed.
- Re-bake the potatoes: Line a baking sheet with parchment or nonstick aluminum foil. Place the hollowed-out potatoes on the prepared baking sheet. Using a large spoon, fill the recess of each potato with the filling. Top the potatoes with the remaining cheese. Bake until the tops begin to brown, 20 to 25 minutes. Serve with a dollop of the reserved yogurt mixture.

- Rub the potatoes with oil: This will help to crisp up the skin.
