Tips:

  • When making the crust, use cold butter and work it quickly into the flour mixture until it resembles coarse crumbs. This will help prevent the crust from becoming tough.
  • Press the crust firmly into the pan and up the sides. This will help prevent the crust from shrinking during baking.
  • Bake the crust for 10-12 minutes, or until it is golden brown. This will help ensure that the crust is fully cooked and able to hold the filling.
  • When making the filling, use ripe bananas. This will give the filling a sweeter and more flavorful taste.
  • Be sure to mash the bananas until they are very smooth. This will help prevent the filling from being lumpy.
  • Use a stand mixer fitted with the paddle attachment to cream together the cream cheese and sugar until light and fluffy. This will help incorporate air into the filling, making it smooth and creamy.
  • Fold the whipped cream into the cream cheese mixture until just combined. Be careful not to overmix, as this can cause the filling to deflate.
  • Pour the filling onto the cooled crust and refrigerate for at least 4 hours, or overnight. This will allow the filling to set and firm up.
  • When ready to serve, top the bars with whipped cream and chopped nuts, if desired.

Conclusion:

Texas Gold Bars are a delicious and easy-to-make dessert that is perfect for any occasion. With a buttery crust, creamy filling, and sweet banana flavor, these bars are sure to be a hit with everyone. They are also a great way to use up ripe bananas.
