WEST TEXAS BAKED BEANS

West Texas Baked Beans image

These baked beans have a spicy, smoky bacon flavor.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 8

6 cups (2 1/2 pounds) dried pinto beans
1 pound bacon
2 onions, cut into 1/4-inch dice
4 teaspoons chili powder
4 cloves garlic, minced
1 1/4 cups firmly packed light-brown sugar
2 12-ounce bottles dark beer
Salt and freshly ground black pepper

Steps:

  • In a stockpot or Dutch oven, cover beans with cold water by 6 inches. Soak 8 hours or overnight.
  • In a heavy skillet, cook bacon over medium heat until crisp. Remove bacon, and set aside.
  • Pour off all but 3 tablespoons fat. Add onions, chile powder, and garlic; saute stirring, until onions are soft, about 5 minutes.
  • Drain beans. Return to stockpot; cover with water by 2 inches. Crumble bacon into small pieces; add to beans with onion mixture, sugar, and beer. Cook, covered, over medium-high heat; stir occasionally, until beans are soft and liquid is almost absorbed, about 2 1/2 hours. Season with salt and pepper and serve warm.

Tips:

  • Soak the beans overnight: Soaking the beans overnight helps to soften them and reduce the cooking time. You can also quick-soak the beans by bringing them to a boil in a large pot of water, then removing them from heat and letting them soak for an hour.
  • Use a variety of beans: This recipe calls for pinto beans, but you can also use black beans, kidney beans, or a mix of different types of beans.
  • Add flavorful ingredients: The spices and seasonings in this recipe give the beans a delicious flavor. You can also add other ingredients to the pot, such as diced tomatoes, chopped onions, or corn.
  • Cook the beans until they are tender: The cooking time will vary depending on the type of beans you are using. Pinto beans typically take about an hour to cook.
  • Serve the beans with your favorite toppings: Once the beans are cooked, you can serve them with a variety of toppings, such as shredded cheese, sour cream, or salsa.

Conclusion:

Texas spicy beans are a delicious and easy-to-make dish that can be enjoyed by people of all ages. The beans are packed with flavor and can be served with a variety of toppings. This recipe is a great way to use up leftover beans, and it is also a good source of protein and fiber.
