My best friend, Deb, bought me a class at a Thai cooking school for my birthday. This was my favourite recipe. The most important thing I learned was, when it comes to Thai cooking, don't use substitutes - you only get the real flavour if you take the trouble to buy the right ingredients. This should be cooked in a wok, but a frypan will do if you don't have one. Don't be worried by the chillies, this dish is mild - as long as you remove the seeds from the chillies.

500 g pork fillets, chopped into small, bite-sized pieces
2 tablespoons garlic, finely chopped
4 shallots, finely sliced (use golden or red shallots)
2 large red chilies, deseeded then finely chopped
2 large green chilies, deseeded then finely chopped
2 tablespoons oyster sauce
2 tablespoons fish sauce
1 tablespoon palm sugar
1 cup basil leaves, torn (use Thai basil if available, but sweet basil will be fine)
vegetable oil
white pepper

Steps:

  • Prepare all ingredients in advance.
  • Place wok or pan over a moderate heat and add 2 tablespoons oil.
  • Add garlic and stir fry gently until it is just starting to colour lightly.
  • Add the sliced shallots and stir fry for a few minutes until they are transparent.
  • Remove garlic and shallots to another dish and set aside until needed.
  • Add a little more oil to the pan and increase heat.
  • Stir fry pork, in batches, until it is coloured (it doesn't have to be cooked through).
  • When the last batch of pork is cooked, add the shallots and garlic and the remaining pork to the pan.
  • Add the chillies and stir fry for a minute or two.
  • Now add the oyster sauce, fish sauce and palm sugar.
  • Stir fry for about 5 minutes or so until pork is cooked and the sauce is slightly caramelised.
  • Add basil and stir fry until wilted.
  • Before serving, sprinkle lightly with white pepper.
  • Serve with steamed jasmine rice.

200 g ground pork
2 tablespoons oil
2 tablespoons red Thai chile, pounded
2 garlic cloves
1 tablespoon oyster sauce
1 1/2 tablespoons fish sauce
1 teaspoon sugar
1/4 cup water or 1/4 cup pork stock
1/2 cup Thai basil, fresh chopped

Steps:

  • In a hot pan, add the oil and stir fry garlic and chili until fragrant.
  • Add pork and continue to stir fry on medium heat until almost ready.
  • Keep stir frying and add pork stock as needed.
  • Add oyster sauce, fish sauce, sugar.
  • Increase heat to high and add fresh thai basil. Keep stir frying for few seconds.
  • Serve with white basmati rice and fried eggs.

3 medium carrots, cut into thin matchsticks
2 large lemongrass stalks, tender inner bulbs only, chopped
1 tablespoon chopped fresh ginger
1/2 teaspoon sugar
2 tablespoons vegetable oil
1 small onion, thinly sliced
3/4 pound ground pork
3/4 cup unsweetened coconut milk
1 tablespoon Thai red curry paste
1/2 teaspoon Sriracha chile sauce
3 tablespoons fresh lime juice
10 ounces fresh thin egg noodles, preferably Chinese
1/2 cup chopped basil, preferably Thai
Salt and freshly ground black pepper

Steps:

  • 1.In a medium saucepan, bring 1 1/2 cups of water to a boil. Add the carrots and cook until crisp-tender, about 2 minutes. Using a slotted spoon, transfer the carrots to a plate. Reserve the carrot cooking water. 2.In a mini food processor, puree the lemongrass with the ginger and sugar. 3.In a large, deep skillet, heat the vegetable oil. Add the onion and cook over moderately high heat, stirring, until golden brown. Add the lemongrass mixture and cook, stirring, until fragrant, about 2 minutes. Add the ground pork and cook, breaking up the meat, until no pink remains, about 3 minutes. Add the coconut milk and reduce the heat to moderate. Stir in the red curry paste, Sriracha and lime juice and turn off the heat. 4.In a large pot of salted boiling water, cook the noodles until al dente; drain well. Add the noodles, carrots and carrot cooking water to the skillet and toss over moderate heat until the noodles are thoroughly coated. Add the basil, season with salt and pepper and serve.

1 lb pork cut into thin strips
6 clove garlic minced
1 fresh red chili sliced
1/4 c chicken stock
1 large egg
4 scallions sliced
1/2 c fresh thai basil chopped
oil for stir frying
SAUCE
2 Tbsp oyster sauce
3 Tbsp golden mountain seasoning sauce
1 Tbsp fish sauce
1 tsp dark soy sauce
1/4 c brown sugar
2 Tbsp fresh lime juice

Steps:

  • 1. Combine all the sauce ingredients together and set aside. Add the oil to a Wok or skillet. Stir fry the garlic and chilies for 30 seconds. Add the pork and stir fry for about 5 minutes. Push to the side and add the egg and scramble it and then incorporate into the rest of the ingredients. Add the chicken stock, and sauce reduce heat and simmer 2 to 3 minutes.
  • 2. Add the green onions and basil. Simmer another 2 minutes. Serve with rice
