1 cup shredded sharp cheddar cheese
1 cup thinly sliced green onions with tops
3 garlic cloves, minced
1 loaf French bread (about 20 inches), halved lengthwise
1/3 cup minced fresh parsley, optional
Paprika, optional

Steps:

  • Mix mayonnaise, cheese, onions and garlic; spread on bread halves, if desired, sprinkle with parsley and paprika. Wrap each half in foil. Refrigerate for 1-2 hours or freeze. , Unwrap and place on a baking sheet. Bake at 400° for 8-10 minutes (20-25 minutes if frozen) or until puffed but not brown. Cut into slices.

⅓ cup grated Parmesan cheese
½ cup butter, softened
2 tablespoons garlic powder
1 teaspoon dried parsley

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut bread into 1-inch thick slices, without cutting all the way through the loaf. Mix Parmesan cheese, butter, garlic powder, and parsley in a small bowl. Spread mixture between slices of bread and over the top of the loaf. Wrap loaf in aluminum foil, leaving the top partially uncovered.

I came to the Bay Area CA in 1975 and the first Fish Market was opened on El Camino Real in Palo Alto CA the next year in 1976. It was only 5 minutes from work and I started going to the Fish Market often for lunch. The second Fish Market was opened in early 80's also in my neighborhood, Santa Clara. Since then, they have expanded to the Socal area. I've always loved their seafood selection. So fresh, but I also loved few other offerings such as this Cheezy Garlic Bread, their coleslaw and potatoes au gratin. This recipe comes from their own cookbook. Apparently this bread was served mainly for their employees long before it hit the menu. In the book, this bread is made with 3 types of sauces ie garlic puree, aioli sauce and finally Parmesan sauce that adds garlic puree and aioli sauce. I streamlined the procedure for easier recipe.

1 loaf sourdough bread, sliced in half lengthwise
10 garlic cloves
2 tablespoons olive oil
1 cup mayonnaise
1 cup parmesan cheese
2 tablespoons lemon juice
2 tablespoons parsley, minced
1/3 cup green onion, minced

Steps:

  • Preheat oven to 425°F.
  • Finely mince garlic in a food processor with olive oil or alternatively finely mince garlic and mix olive oil in to incorporate well. Only use 1 T garlic puree for this recipe and freeze the rest in a small container for other uses or later use. Once frozen, it can be easily scooped out.
  • Combine 1 T garlic puree from above, mayonnaise, Parmesan cheese, lemon juice, parsley, and green onion. Mix well.
  • Slice the bread lengthwise in half and liberally spread the Parmesan cheese mixture on the cut side of the bread.
  • Bake at 425 F for about 9-10 minutes until brown and crusty.

Studded with melty cheese and herbs, this garlic bread couldn't be easier! I like to buy a crusty round loaf of bread right from the bakery section of my grocery store. Be careful not to cut all the way through the loaf-you don't want the cheese to ooze out the bottom and stick to the pan.

1 small round loaf sourdough bread (7 ounces)
4 tablespoons unsalted butter
1/3 cup chopped fresh parsley, plus for more garnish
1 teaspoon onion powder
Pinch kosher salt
5 cloves garlic, minced
4 ounces mozzarella, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Score the bread with 2-inch-deep cuts with a serrated knife into a 1-inch diamond pattern without slicing all the way through. Place on a parchment paper-lined baking sheet.
  • Melt the butter in a small saucepan over medium heat. Stir in the parsley, onion powder, salt and garlic. Brush the butter mixture all over the bread and into the cut diamonds using a pastry brush. Insert the cheese cubes in the crevices of the bread.
