1 lb butter
2 tablespoons flour
1 lb freshly grated parmesan cheese
4 ounces Fontina cheese
3 tablespoons minced garlic
1 teaspoon salt
2 teaspoons black pepper

Steps:

  • On medium heat, add butter, garlic, and flour until butter is melted. Do not brown garlic.
  • Whisk in the heavy cream until hot.

2 tablespoons minced garlic (from a jar)

  • In double boiler, melt butter. Add garlic--do not let brown. Add pepper, milk, and cream. Bring up to 185 degrees.
  • Stir fast with whisk while shaking in parmesan. Continue whisking until it's a smooth sauce.
  • For thicker sauce, add more parmesan or even grated romana.
  • (Does not reheat well and is thrown out after three hours at the "Garden".).

½ cup Romano cheese (grated and at room temperature)
Salt and black pepper (to taste)
1 lb. Fettuccine
Parsley (to garnish)

Steps:

  • Boil the fettuccine according to package instructions. As the water preheats, begin the sauce.
  • Melt the butter in a large saucepan over medium heat. Add the garlic and cook for one minute.
  • Whisk in the flour and cook for 1 minute, stirring continuously.
  • Add the heavy cream in splashes, stirring continuously. Add the milk in the same manner.
  • Bring to a gentle bubble, then reduce heat to low to bubble. It will continue to thicken as it simmers.

1 1/2 cups milk
1 1/2 cups heavy cream
1/2 cup imported parmesan cheese, grated
1/2 cup imported romano cheese, grated
6 egg yolks, from fresh jumbo eggs
salt and black pepper

Steps:

  • HEAT milk and cream in a heavy bottom saucepan until it begins to simmer.
  • Turn off heat.
  • Slowly whip in cheese, then remove from heat.
  • PLACE egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture.
  • Slowly add egg yolk mixture back into remaining cream mixture.
  • Place back on very low heat and continually stir until simmering.
