Tips:

  • To ensure juicy pork chops, select chops that are at least 1-inch thick and cook them over medium heat.
  • Brining the pork chops in a mixture of water, salt, and sugar for at least 30 minutes before cooking will help them retain moisture and flavor.
  • Dredging the pork chops in flour before searing will help create a crispy crust.
  • Use a non-stick skillet or well-seasoned cast iron skillet to sear the pork chops. This will help prevent them from sticking and ensure even cooking.
  • Do not overcrowd the skillet when searing the pork chops. This will cause them to steam instead of sear.
  • Cook the pork chops until they reach an internal temperature of 145 degrees Fahrenheit for medium-rare or 155 degrees Fahrenheit for medium.
  • Let the pork chops rest for 5-10 minutes before serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful chop.
  • Serve the pork chops with the gingery tangy gravy and your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
