1 pound onions, chopped coarse
2 large cloves garlic, chopped fine
1 tablespoon olive oil
1 pound yellow or red and green peppers, chopped coarse
1/2 pound carrots, chopped fine
3/4 pound mushrooms, trimmed and chopped coarse
1 28-ounce can no-salt-added tomato puree
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup water
1 1/2 cups instant couscous

Steps:

  • Saute onions and garlic in hot oil in a nonstick skillet until onions soften and begin to brown.
  • Add peppers, carrots and mushrooms and continue cooking over medium heat for 15 minutes.
  • Add tomato puree, oregano, basil and water and cook over low heat for about 15 minutes longer, until flavors are well blended.
  • Meanwhile, cook couscous, following directions on package. To serve, pour the sauce over the couscous.

I great way to get a variety of vegetables into your family without the I don't like that veggie! This freezes well so you can divide into freezer bags for future use (if it lasts). Use on pasta, in stew, bean dishes, top a pizza, or in soups. This can make this on your stove top as well.

3 -4 tablespoons olive oil
1 onion, diced
1 carrot, diced
6 garlic cloves, minced
1 stalk celery, diced
1 pepper, diced
1 large eggplant, peeled and diced
1 large portabella mushroom, gills removed and diced
3 (28 ounce) cans crushed tomatoes
2 tablespoons dried Italian herb seasoning
1 tablespoon sugar
1 teaspoon salt
1 teaspoon pepper
4 fresh basil leaves, roughly torn
1 tablespoon fresh parsley, roughly torn

Steps:

  • Heat oil in a large deep heavy bottom pot over medium high heat.
  • Add next 7 ingredients and saute till almost tender about 10 minutes stirring frequently.
  • Transfer to a large crock pot add tomatoes, dried seasoning, sugar, salt, and pepper.
  • Cook for 5-6 hours on high stirring ever so often.
  • If it starts to stick to bottom turn to low or finish by adding the fresh herbs.
  • If you`re not around to stir cook on low till desired thickness.

2 table sppons Virgin Olive oil
1 lb Lean Ground Beef
1 lb of Ground Sweet or Hot Sausage
2 table spoons oregano
8 leaves fresh basil
1 15 oz can of Tomato Sauce
1/2 or 3oz of a 6oz can of Tomato Paste
1 29oz Can of Tomato Puree
1 15oz can Sliced Stewed Tomatos
1 large Yellow Onion
Two cloves chopped garlic
1 pound of Sweet or Hot Italian Sausage links
29 oz of water or fill the crushed tomato can
1 cup of any red wine

Steps:

  • Mince the yellow onion. In a 5 quart sauce pan, heat the 2 tablespoons of the Olive oil saute onions and garlic, after tender but not brown add 1 lb of ground beef and 1 lb of ground sausage. After meat is browned, add all remaining ingredients. Simmer for at least two hours on low heat..Stir often. Sauce should be thick. If you prefer a less thickness add more water or wine to sauce at any point during the cooking. Serve over your favorite Pasta, Gnocchi , Tortellini or Ravioli.
