THICK & CHUNKY TOMATO SAUCE WITH VEGGIES (CROCK POT)
Lots of vegetables gives this sauce a meat sauce look but isn't. I had friends come over while it was cooking and taste it a thought it was a meat sauce. I great way to get a variety of vegetables into your family without the I don't like that veggie! This freezes well so you can divide into freezer bags for future use (if it lasts). Use on pasta, in stew, bean dishes, top a pizza, or in soups. This can make this on your stove top as well.

Tips:
- Use high-quality tomatoes: Fresh, ripe tomatoes are the key to a flavorful sauce. Heirloom tomatoes work particularly well.
- Roast the tomatoes: Roasting tomatoes in the oven concentrates their flavor and makes them wonderfully sweet.
- Use a variety of herbs and spices: Oregano, basil, thyme, garlic, and onion are all classic Italian flavors that pair well with tomatoes. Don't be afraid to experiment with other herbs and spices too.
- Simmer the sauce for a long time: The longer you simmer the sauce, the more time the flavors have to develop. A good rule of thumb is to simmer the sauce for at least 30 minutes, but you can simmer it for up to several hours.
- Season the sauce to taste: Once the sauce is finished simmering, taste it and season it with salt, pepper, and other spices as needed.
