Time 17m

Yield 6 quesadillas

Number Of Ingredients 7

4 medium roasted jalapenos, halved lengthwise, seeded, and thinly sliced crosswise
1 cup shredded jack cheese
1 cup shredded Cheddar
1 cup shredded provolone cheese
2 tablespoons chopped cilantro leaves
6 (6-inch) flour tortillas
Tomatillo Salsa, for serving

Steps:

  • Combine chiles, cheese, and cilantro in a medium bowl and toss to evenly mix.
  • Heat a seasoned cast iron skillet or a large frying pan over medium heat. Add 1 quesadilla and cook until soft, about 15 to 30 seconds.
  • Add 1/2 cup cheese mixture on one half, fold in half, and cook until cheese is melted and tortilla is golden brown, about 1 to 2 minutes. Repeat for remaining quesadillas. Cut each quesadilla into 4 wedges and serve with tomatillo salsa.

Tips:

  • Choose the Right Cheese: Select cheeses that melt well and have distinct flavors. A blend of mozzarella, cheddar, and Monterey Jack is a classic choice, but you can experiment with other options like queso Oaxaca, cotija, or pepper Jack.
  • Prepare Your Fillings: Cook any fillings you plan to include in your quesadillas, such as sautéed vegetables, shredded chicken, or grilled steak. This will ensure they are evenly heated and flavorful.
  • Season Your Ingredients: Don't forget to season your fillings and cheese with salt, pepper, and any other desired spices. This will enhance the overall flavor of your quesadillas.
  • Use Fresh Tortillas: Fresh tortillas will give you the best results. If you're using store-bought tortillas, warm them up in a skillet or on a griddle before assembling your quesadillas.
  • Fold Properly: Fold your quesadillas carefully to ensure the filling is evenly distributed and doesn't spill out while cooking. You can fold them in half or quarters, depending on your preference.
  • Cook Until Golden Brown: Cook your quesadillas over medium heat until they are golden brown and crispy on both sides. This will ensure the cheese is melted and the filling is heated through.
  • Serve with Dipping Sauces: Serve your quesadillas with a variety of dipping sauces to enhance the flavor. Some popular options include salsa, guacamole, sour cream, and pico de gallo.

Conclusion:

Three-cheese quesadillas are a versatile and delicious meal that can be enjoyed for breakfast, lunch, or dinner. With a few simple ingredients and a little bit of preparation, you can create a satisfying and flavorful dish that the whole family will love. Experiment with different cheeses, fillings, and dipping sauces to find your favorite combinations. Whether you're looking for a quick and easy weeknight meal or a fun appetizer for a party, three-cheese quesadillas are sure to be a hit.
