You need only a handful of ingredients for Ina Garten's Oven-Fried Chicken recipe from Barefoot Contessa on Food Network; buttermilk keeps the meat extra moist.

Categories     main-dish

Time 10h55m

Yield 6 servings

Number Of Ingredients 6

2 chickens (3 pounds each), cut in 8 serving pieces
1 quart buttermilk
2 cups all-purpose flour
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Vegetable oil or vegetable shortening

Steps:

  • Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
  • Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

THUNDER BAY OVEN FRIED CHICKEN

Thunder Bay Oven Fried Chicken image

My grandmother sent me this community book from Thunderbay, it's pretty old, the dishes are amazing and very easy to fix. This was one of my grandmothers favourite dishes. I remember having this when we were little kids visiting her.

Categories     Poultry

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 12

4 lbs chicken pieces or 4 lbs chicken breasts
6 cups dry bread cubes (diced bread)
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/4 teaspoons sage
2 tablespoons oil, vegetable
4 tablespoons onions, chopped
1/2 cup margarine, melted
1 (10 ounce) can cream of chicken soup
2 tablespoons flour
1 1/4 cups water, cold

Steps:

  • Add salt, pepper, sage and 1/2 cup of flour together.
  • Dip chicken in seasoned flour.
  • Brown all over in hot oil.
  • Dressing- Combine bread cubes, onion and melted margarine with 1/2 of the soup to bind.
  • In a roasting pan place the bread dressing on bottom of pan.
  • Add the chicken to the top of the dressing.
  • Mix 2 tbsp of flour to 1/2 can of chicken soup and add 1 1/2 cups of water (*you want 2 cups of liquid for gravy).
  • Pour over top of chicken and dressing.
  • Cover tightly and bake at 350 degrees for 1 hour.
  • Serve with mashed potatoes, carrotes, yellow beans and peas.

Tips:

  • For the best results, use a cast iron skillet. It will help to evenly cook the chicken and give it a crispy crust.
  • Don't overcrowd the skillet. Cook the chicken in batches if necessary.
  • Make sure the chicken is completely coated in the flour mixture before frying.
  • Fry the chicken over medium heat. If the heat is too high, the chicken will brown too quickly and the inside will be undercooked.
  • Cook the chicken until it is golden brown and crispy on the outside and cooked through on the inside. This will take about 10-12 minutes per side.
  • Serve the chicken hot with your favorite sides.

Conclusion:

Thunder Bay oven-fried chicken is a delicious and easy-to-make dish that is perfect for any occasion. With its crispy crust and juicy interior, this chicken is sure to be a hit with everyone who tries it. So next time you're looking for a tasty and satisfying meal, give Thunder Bay oven-fried chicken a try.
