STEAKS AND STILTON SAUCE

Steaks and Stilton Sauce image

Provided by Ina Garten

Categories     main-dish

Time 35m

Yield Serves 4 to 6

Number Of Ingredients 12

4 (1 1/4-inch thick) boneless rib eye steaks
Good olive oil
Kosher salt and freshly ground black pepper
Stilton Sauce, recipe follows
1/2 cup good mayonnaise
1/2 cup sour cream
4 ounces Stilton cheese, crumbled
8 ounces cream cheese, at room temperature
1 tablespoon chopped scallions, white and green parts
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon Worcestershire sauce

Steps:

  • Thirty minutes before grilling the steaks, remove them from the refrigerator and allow them to come to room temperature. Heat a grill with coals.
  • When the coals are hot, spread them out in the grill in one solid layer. Pat the steaks dry on both sides with paper towels and brush each side lightly with olive oil. Sprinkle them liberally with salt and pepper. Place the steaks on the hot grill and sear them on each side for 2 minutes, until browned. Place the lid on the grill and allow the steaks to cook for another 3 to 4 minutes, until they are cooked rare, or 120 degrees on a meat thermometer. (To test the steaks, insert the thermometer sideways to be sure you're actually testing the middle of the steak.) Remove the steaks from the grill, place them in one layer on a platter, and cover tightly with aluminum foil. Allow the steaks to rest at room temperature for 15 minutes. Slice and serve warm with the Stilton Sauce.
  • Place the Stilton in the bowl of a food processor fitted with a steel blade and blend until finely minced. Add the cream cheese, mayonnaise, sour cream, scallions, salt, pepper, and Worcestershire sauce. Process until smooth. Serve at room temperature.

Time 45m

Yield 6 , 6 serving(s)

Number Of Ingredients 11

1 1/2 lbs beef t bone steaks (at least 1 inch in thickness)
1 tablespoon vegetable oil
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon sweet Hungarian paprika
1/2 teaspoon dry mustard
2 teaspoons cider vinegar
8 tablespoons unsalted butter (chilled and cut into 8 pieces)
3 garlic cloves (medium, peeled, ends removed, put through a garlic press)
1/2 teaspoon salt (kosher)
1/2 teaspoon pepper (cracked)

Steps:

  • Pat steaks dry. Lightly coat the steaks with the vegetable oil and set aside for 30 minutes.
  • In medium saucepan, whisk together the ketchup, Worcestershire sauce, paprika, mustard and vinegar; set aside.
  • Preheat the broiler or grill. Place the steaks on the broiler pan or grill and cook until seared and well crusted on one side, about 5 minutes. Turn the steaks. Season with salt and pepper to taste and cook on second side for 3 minutes for rare or 4 more minutes for medium. Remove from heat and let sit for 5 minutes.
  • For the sauce, place the ketchup mixture over very low heat and heat to just warm. Whisk in the butter pieces, one or two at a time. Whisk constantly; the butter should melt but not become separated. If butter melts to fast, remove from heat and continue whisking. Stir in the garlic and season to taste.
  • Carve steaks into 1/2 inch thick slices and divide among 4 - 6 warm plates. Spoon 2 tbsps. of sauce over each portion. Serve immediately. Serves 6.

THUNDER'S FAMOUS STEAK SAUCE

Thunder's Famous Steak Sauce image

My Daddy, whose nickname was Thunder from his days as a defensive end at LSU, was a wonderful cook. This is the mushroom sauce he served every time he grilled steaks, which was quite often.

Provided by Pat Hayes @MSPat

Categories     Other Sauces

Number Of Ingredients 9

1/2 stick(s) butter
3 - green onions, chopped fine
1 clove(s) chopped garlic
1/2 - lemon, juice only
1 tablespoon(s) worchestershire sauce
Dash - tabasco sauce
1 cup(s) sliced mushrooms
1 fluid jigger dry sherry
- salt & pepper to taste

Steps:

  • Melt the butter in a skillet and add the onions and garlic. Saute a few minutes and add remaining ingredients until the veggies have softened. Spoon over grilled steak. Delicious!

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the steak sauce will be. Use a good quality steak sauce, such as Heinz 57 or A.1. Sauce.
  • Spice it up: If you like your steak sauce with a little kick, add some cayenne pepper, chili powder, or Sriracha sauce.
  • Get creative: Don't be afraid to experiment with different flavors. You can add Worcestershire sauce, soy sauce, or even a little bit of maple syrup.
  • Let it simmer: The longer you simmer the steak sauce, the more flavorful it will be. Simmer it for at least 15 minutes, or even longer if you have time.
  • Taste it and adjust: Once the steak sauce is done simmering, taste it and adjust the seasonings to your liking.

Conclusion:

Thunder's Famous Steak Sauce is a delicious and versatile sauce that can be used on a variety of dishes. It's perfect for steak, chicken, fish, and even vegetables.
