TILAPIA ALL-IN-ONE CASSEROLE
A quick, tasty tilapia casserole that is loved even by my husband who isn't crazy about fish.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Combine cooked rice, thawed vegetables, and Cheddar cheese in a large bowl.
- Melt butter in a small saucepan over low heat. Stir in lemon juice, bouillon granules, paprika, and pepper.
- Pour 1/2 of the butter sauce over the rice mixture. Stir to combine, then spread in the bottom of the prepared baking dish. Place tilapia fillets in a single layer on top of rice, and pour remaining sauce over top.
- Bake in the preheated oven until fish flakes easily with a fork, 35 to 40 minutes.

Only four ingredients, easy and oh so good! The orginal recipe calls for frozen flounder, but I've found that the Tilapia works better in this recipe. I've updated to change the cooking time from 30 minutes to 45 minutes after reading the reviews.

- Layer frozen fish fillets in greased casserole dish (9x9), overlapping if needed.
- Spread cream of shrimp soup over fish.
- (Do not add water).
- Melt margarine and mix with crushed crackers.
- Sprinkle cracker mixture over casserole.
- Bake uncovered at 350° for about 45 minutes.
- Note: Sometimes I sprinkle old bay seasoning on the cream of shrimp soup before adding the crackers.
- Also I add a dash or two of hot sauce to the melted butter before adding to the cracker crumbs.

- Pulse bread, potato chips, dill, and cayenne in food processor. Bread tilapia in mixture and refrigerate. Heat oil in deep pot for 1 minute. Add sausage and cook for 5 minutes. Chop onion and garlic in food processor. Slice pepper in processor. Stir rice into pot. Add broth, onion, garlic, pepper, and saffron. Bring to a boil and simmer, covered, for 30 mins. Chop cilantro, marjoram, and jalapenos in processor. Stir tomatoes, cilantro, marjoram, and jalapenos into pot. Bring to a boil again and simmer 15 minutes. Heat butter in skillet with lemon juice and zest and mustard. Cook fish 5 minutes per side. Stir corn and fava beans into rice. Cook on low, covered, for 10 mins. Top with fish and black pepper.
ASPARAGUS TILAPIA CASSEROLE
I made this up from ideas from a couple of other recipes. I sometimes like to whisk a little skim milk into the soup before pouring on top so that it infiltrates down to the bottom of the pan better. You could sprinkle the top of the soup with bread crumbs but I like it with out and with out the extra calories. Sometimes I also like to add a can of sliced water chestnuts on top of the asparagus for some crunch.
