Tips:

  • Choose the right cheese. For a smoky flavor, use Tillamook Smoked Cheddar. You can also use other types of cheddar cheese, but the smokiness of the Tillamook cheese really makes these biscuits special.
  • Use cold butter. Cold butter will help to create flaky biscuits. If you use melted butter, the biscuits will be more dense.
  • Don't overwork the dough. Overworking the dough will make the biscuits tough. Mix the ingredients just until they come together.
  • Chill the dough before baking. Chilling the dough will help to create flaky biscuits. You can chill the dough for up to 2 hours.
  • Bake the biscuits until they are golden brown. The biscuits are done baking when they are golden brown on top and a toothpick inserted into the center comes out clean.

Conclusion:

These Tillamook Smoked Cheddar Biscuits with Crisp Bacon and Apricots are the perfect savory and sweet combination. They're easy to make and perfect for any occasion. The biscuits are flaky and buttery, the bacon is crispy and the apricots are sweet and tangy. These biscuits are sure to be a hit with everyone who tries them.
