4 large sweet potatoes
1/4 cup butter, softened
3/4 cup sugar
1/8 teaspoon salt
1/4 cup Jack Daniels Whiskey
1/2 cup pecan halves, lightly toasted

Steps:

  • In a large pan sweet potatoes in just enough water to cover.
  • Bring to a boil, cover and cook until tender, about 35 minutes.
  • Drain and cool, then peel off skins.
  • In mixing bowl mash the potatoes with butter.
  • Add sugar, salt and whiskey.
  • Spread half the potatoes in 1.5 quart buttered casserole dish. Sprinkle with half the pecans. Repeat layers.
  • Bake at 325 for 30 minutes.

1 1/4 lbs sweet potatoes, peeled and cut into 1/4 " slices
1 teaspoon lite olive oil
3/4 cup chicken broth
1/2 cup fresh orange juice
2 tablespoons dark rum
1 1/2 teaspoons honey
2 teaspoons cornstarch
salt and pepper
1 tablespoon fresh minced parsley (optional)

Steps:

  • Put oil and sweet potatoes in a skillet with a 1/2 cup of the chicken broth Bring to a boil, cover and simmer for 8 minutes, uncover and continue cooking until liquid has disappeared about 5 minutes.
  • The potatoes should be slightly browned around the edges.
  • Stir occasionally.
  • In a bowl mix remaining broth,cornstarch, orange juice, rum, honey and salt& pepper.
  • Add this mixture to the pan, bring to a boil, stirring until it has thickened.
  • Serve.

1/4 cup(s) butter
3/4 cup(s) brown sugar, firmly packed
1/4 cup(s) jack daniel's whiskey
1/2 cup(s) pecans lightly toasted

Steps:

  • In a 14" dutch oven place sweet potatos . Cover with water completely. Bring to a boil,cover and cooked until tender.,abought 35 min. Drane and cool, enough to handle,Peel off the skins.
  • In a large mixing bowl,mash potatos with butter. Stir in suger,salt,and whiskey.
  • Butter a 2 qt baking dish,spred half of the potatos and sprinkle with half of pecans. Repet the layers... Place dish in a pre heated ove(set at 325) bake for abought 35 min...
