REUBEN TOAST WITH POACHED EGGS

Reuben Toast with Poached Eggs image

This is my ode to one of America's greatest sandwiches, the Reuben--corned beef, Swiss cheese, sauerkraut, and Russian or Thousand Island dressing on rye. I top my open-face version with a poached egg and a cheater's Thousand Island-style sauce that can be drizzled on as is, which is my preference, or heated gently in a small saucepan or the microwave. Even without the poached egg this is definitely a knife-and-fork toast.

Time 35m

Yield 4 servings

Number Of Ingredients 14

4 slices seeded rye bread
1/2 cup mayonnaise
2 tablespoons ketchup
2 tablespoons sweet pickle relish
1/4 teaspoon hot paprika
1/4 teaspoon Worcestershire sauce
2 tablespoons fresh lemon juice
Kosher salt and freshly ground black pepper
1/4 cup distilled white vinegar
4 large eggs
6 slices Swiss cheese
1/2 pound thinly sliced corned beef
1 cup drained sauerkraut
Snipped fresh chives, for sprinkling

Steps:

  • Preheat the oven to 425 degrees F.
  • On a large baking sheet, toast the bread for about 5 minutes, until lightly browned on the bottom.
  • Fill a large deep skillet about halfway with water and heat over medium heat until tiny bubbles appear on the bottom.
  • In a medium bowl, whisk together the mayonnaise, ketchup, relish, paprika, Worcestershire sauce and lemon juice. Season the sauce generously with salt and pepper.
  • Stir the vinegar and a generous pinch of salt into the hot water in the skillet. One at a time, crack the eggs into a small bowl and very carefully slide them into the water. Poach over medium heat until the whites are just firm and the yolks are runny, 3 to 5 minutes. Using a slotted spoon, transfer the eggs to a plate.
  • Meanwhile, top each toast with a slice and a half of cheese, one-quarter of the corned beef and 1/4 cup of the sauerkraut. Bake for about 5 minutes more, until the cheese is just melted. Top each toast with a poached egg and drizzle with the Reuben sauce. Sprinkle with snipped chives and serve immediately.

REUBEN SANDWICH RECIPE BY TASTY

Reuben Sandwich Recipe by Tasty image

It's reuben time! Made with homemade Russian dressing, savory corned beef, Swiss cheese, tangy sauerkraut, and rye bread, then toasted until crisp and melty, this is a serious sandwich.

Provided by Tasty

Categories     Lunch

Time 16m

Yield 2 servings

Number Of Ingredients 11

¾ cup mayonnaise
¼ cup ketchup
1 tablespoon pickle relish
2 teaspoons yellow mustard
1 teaspoon worcestershire sauce
1 teaspoon paprika
2 tablespoons unsalted butter
4 slices rye sandwich bread
1 cup suerkraut
½ lb corned beef, sliced
4 slices swiss cheese

Steps:

  • Make the Russian dressing: In a small bowl, whisk together the mayonnaise, ketchup, pickle relish, mustard, Worcestershire sauce, and paprika.
  • Make the sandwich: On a cutting board, spread ½ tablespoon of butter on one side of each slide of bread. Flip the bread slices over so that the buttered side is face down. Spread 1 tablespoon of Russian dressing on each slice. Add ¼ pound corned beef to 2 of the slices of bread. Top the corned beef with ½ cup of sauerkraut and 2 slices of Swiss cheese. Place the other slice of bread on top, buttered side out.
  • Heat a large pan over medium-low heat. Once the pan is warm, add the sandwiches and cook, without moving, until golden brown, 2-3 minutes. Carefully flip the sandwiches over and continue cooking until the bread is golden brown and cheese has melted, 2-3 minutes more.
  • Transfer the sandwiches to a cutting board and cut in half. Serve immediately.
  • Enjoy!

Tips:

  • Use high-quality bread. The bread is the foundation of a great Reuben sandwich, so it's important to use a high-quality loaf that will hold up to the other ingredients.
  • Choose thinly sliced corned beef. Thick-sliced corned beef can be tough and chewy, so it's best to use thinly sliced meat for a more tender sandwich.
  • Use Swiss cheese. Swiss cheese is the traditional cheese for a Reuben sandwich, but you can also use other types of cheese, such as cheddar or provolone.
  • Use Thousand Island dressing. Thousand Island dressing is the classic condiment for a Reuben sandwich, but you can also use other types of dressing, such as Russian dressing or ketchup.
  • Toast the sandwich. Toasting the sandwich will help to melt the cheese and make the bread crispy.
  • Serve the sandwich with your favorite sides. Reuben sandwiches are often served with potato chips, coleslaw, or pickles.

Conclusion:

The Reuben sandwich is a classic deli sandwich that is enjoyed by people of all ages. It's a simple sandwich to make, but it's packed with flavor. The combination of corned beef, Swiss cheese, Thousand Island dressing, and toasted bread is irresistible. If you're looking for a delicious and satisfying sandwich, the Reuben is a great choice.
