Steps:

  • Bring chicken stock or water to the boil, add galangal, lemon grass, kafir lime leaves, coriander stalks and boil for 5 minutes until fragrant.
  • Add chicken breast to the soup, boil for another 5 minutes until cooked.
  • Add a pinch of sugar, coconut milk, chillis, cherry tomatoes and mushroom. Bring the soup to the boil again.
  • Take off the heat. Season with lime juice and fish sauce. Add coriander leaves and spring onions.

Tips:

  • Use fresh ingredients: Fresh ingredients will give your Tom Kha Gai soup the best flavor. If you can, use lemongrass, galangal, and kaffir lime leaves from an Asian grocery store.
  • Don't overcrowd the pot: When you add the chicken and vegetables to the pot, make sure not to overcrowd it. This will prevent the soup from boiling evenly and the chicken from cooking properly.
  • Simmer the soup for at least 30 minutes: This will allow the flavors of the ingredients to meld together and create a delicious, flavorful soup.
  • Taste the soup before serving and adjust the seasonings as needed: Tom Kha Gai soup should be slightly sour, spicy, and creamy. If it's too sour, add a little more coconut milk. If it's too spicy, add a little more water. And if it's not creamy enough, add a little more coconut milk or cream.
  • Serve the soup with jasmine rice or noodles: Tom Kha Gai soup is traditionally served with jasmine rice or noodles. You can also serve it with a side of vegetables, such as steamed broccoli or bok choy.

Conclusion:

Tom Kha Gai soup is a delicious, easy-to-make soup that's perfect for a quick and easy meal. It's also a great way to use up leftover chicken. With its creamy, slightly sour, and spicy flavor, Tom Kha Gai soup is sure to be a hit with your family and friends.
