1 baguette
10 fresh basil leaves (torn into small pieces)
3-4 large tomatoes (chopped, seeds removed)
2 tbsp onion (finely chopped)
1 garlic clove (minced)
2 tbsp balsamic vinegar
1/4 cup mozzarella (sliced thin)
1 tbsp olive oil
1/4 tsp salt
1/4 tsp fresh cracked black pepper

Steps:

  • Slice baguette into thin slices about 1/4" thick.
  • Drizzle your baguette slices with olive oil, then top each slice with a thin small slice of mozzarella cheese.
  • Lightly toast your mozzarella topped baguettes in a toaster oven or in the oven at 350 degrees for about 5-7 minutes.

4 Tbsp extra-virgin olive oil
6 cloves garlic, peeled
Kosher salt and freshly ground black pepper
2 large French bread baguettes, sliced 1-inch thick (about 36 slices)
1 ½ lb(s) fresh mozzarella cheese, sliced ¼-inch thick

Steps:

  • Preheat oven to 375ºF.
  • In the bowl of a food processor, add drained tomatoes, 1 cup basil leaves, olive oil and 2 cloves garlic. Pulse until smooth, but somewhat chunky. Season with salt and pepper.
