Yield 2

Number Of Ingredients 12

• 3 tablespoons peanut or canola oil
• 1 medium onion, thinly sliced
• 1 garlic clove, very finely chopped
• 1 jalapeño, seeded and minced
• 1/2 tablespoon minced fresh ginger
• 1 1/2 tablespoons mild curry powder
• One 28-ounce can Italian peeled tomatoes, drained and chopped, juices reserved
• One 14-ounce can unsweetened coconut milk
• 1 teaspoon sugar
• Salt and freshly ground pepper
• 1 1/4 pounds shelled and deveined large shrimp
• 1/4 cup very coarsely chopped cilantro

Steps:

  • 1. In a medium saucepan, heat 2 tablespoons of the peanut oil until shimmering. Add the onion, garlic, jalapeño and ginger and cook over moderately high heat, stirring, until softened, about 5 minutes. Add the curry powder and cook until fragrant. Add the tomatoes and their juices, the coconut milk and sugar, season with salt and pepper and bring to a boil. Simmer over moderate heat, stirring occasionally, until slightly thickened, 15 minutes. 2. In a large skillet, heat the remaining 1 tablespoon of peanut oil until almost smoking. Add the shrimp in a single layer and cook over moderately high heat, turning once, until lightly browned but not cooked through, about 2 minutes. Add the coconut-curry sauce to the skillet and simmer until it is thickened and the shrimp are just cooked through, 3 to 4 minutes. Stir in the cilantro and serve.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your sauce. Look for tomatoes that are deep red in color and have a firm texture.
  • Use a variety of tomatoes: Don't be afraid to mix and match different types of tomatoes in your sauce. This will add depth and complexity of flavor.
  • Roast your tomatoes: Roasting tomatoes before adding them to your sauce is a great way to concentrate their flavor. You can roast tomatoes in the oven or on the stovetop.
  • Use fresh herbs and spices: Fresh herbs and spices can really brighten up a tomato sauce. Some good options include basil, oregano, thyme, garlic, and red pepper flakes.
  • Simmer your sauce for a long time: The longer you simmer your sauce, the better the flavors will develop. Aim for at least 30 minutes, but you can simmer your sauce for up to several hours.
  • Add a little cream or yogurt: If you want a creamy tomato sauce, you can add a little cream or yogurt at the end of cooking. This will also help to balance out the acidity of the tomatoes.
  • Serve your sauce over your favorite pasta: Tomato sauce is a classic pasta sauce, but it can also be used on pizza, chicken, fish, or vegetables.

Conclusion:

With these tips in mind, you can create a delicious tomato curry sauce that will impress your family and friends. So next time you're looking for a quick and easy meal, give tomato curry sauce a try. You won't be disappointed!
