TOMATO AND BASIL BRUSCHETTA

Tomato and Basil Bruschetta image

My first culinary "success." This recipe came from a great book _Cucina Amore_, and is often requested by friends and family.

Provided by BothFex

Categories     Vegetable

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

6 roma tomatoes, diced
2 cloves garlic, chopped
2 cloves garlic, peeled
3 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
8 slices Italian bread, cut about 1 inch thick
2 tablespoons grated parmigiano-reggiano cheese

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.
  • Enjoy!

Provided by Member recipe by Chiwong

Categories     Snack, Starter

Time 20m

Yield Makes 12

Number Of Ingredients 7

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil

  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

Tips:

  • For the best bruschetta, use fresh, ripe tomatoes. Roma tomatoes are a good choice because they are meaty and have fewer seeds.
  • If you don't have time to roast the tomatoes, you can use sun-dried tomatoes instead. Just soak them in hot water for 10 minutes before using.
  • To make the bruschetta ahead of time, assemble the bruschetta without the tomatoes and basil. Then, store the bruschetta in the refrigerator for up to 2 hours. When you're ready to serve, add the tomatoes and basil.
  • If you're using a baguette, slice it on the bias for a larger surface area.
  • Be generous with the olive oil and balsamic vinegar. This will help to keep the bruschetta moist and flavorful.
  • If you don't have balsamic vinegar, you can use white wine vinegar or lemon juice instead.
  • For a vegetarian version of bruschetta, omit the prosciutto.

Conclusion:

Bruschetta is a delicious and versatile appetizer that can be enjoyed by people of all ages. It's perfect for parties, potlucks, or simply as a snack. With so many different variations to choose from, there's sure to be a bruschetta recipe that everyone will love.
