1 package Regular Flavor Jimmy Dean® Pork Sausage
2 cups chopped leeks (white portion only)
1 cup chopped fennel bulb
2 garlic cloves, minced
1 cup uncooked arborio rice
1/2 cup white wine or chicken broth
1 package (6 ounces) fresh baby spinach
2 cups grape tomatoes, halved
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1/2 teaspoon pepper
1/4 cup grated Parmesan cheese

Steps:

  • In a small saucepan, heat broth and keep warm. In a large skillet, cook the sausage, leeks and fennel over medium heat until meat is no longer pink; drain. Add garlic; cook 1 minute longer. Stir in rice; cook and stir for 2-3 minutes. Reduce heat; stir in wine. Cook and stir until all of the liquid is absorbed., Add heated broth, 1/2 cup at a time, stirring constantly. 1 tablespoon olive oil
7/8 lb hot Italian sausage
1 onion, finely chopped
coarse salt and pepper
1 1/4 cups brown rice
1/2 cup dry white wine
24 ounces Baby Spinach
1/2 cup fresh parmesan cheese
2 tablespoons butter

Steps:

  • In a small saucepan, combine tomatoes (with their juice) and 3 cups water. Bring just to a simmer; keep warm over low heat.
  • In a medium saucepan, heat oil over medium. Add sausage and onion; season with salt and pepper. Cook, breaking up sausage with a spoon, until sausage is opaque and onion has softened, 3 to 5 minutes.
  • Add rice; cook, stirring until well coated, 1 to 2 minutes. Add wine; cook, stirring until absorbed, about 1 minute.
  • Add about 2 cups hot tomato mixture to rice; simmer over medium-low heat, stirring occasionally, until absorbed, 4 to 5 minutes.
