1 Scotch bonnet or habanero pepper, finely diced
1 serrano pepper, thinly sliced
1/2 white onion, chopped (about 1 cup)
2 teaspoons kosher salt
1 teaspoon Vietnamese fish sauce, such as Red Boat
1/2 cup brown sugar
1/2 cup cider vinegar
1/2 cup rice vinegar

Steps:

¾ pound carrots
1 small yellow onion
6 medium fresh jalapenos
2 cloves garlic
1 tablespoon vegetable oil
2 large bay leaves
1 teaspoon whole black peppercorns
1 teaspoon dried Mexican oregano
1 teaspoon cumin seeds
1 teaspoon extra-virgin olive oil

Steps:
