1 package (9 ounces) refrigerated cheese tortellini
40 pimiento-stuffed olives
40 large pitted ripe olives
3/4 cup Italian salad dressing
40 thin slices pepperoni
20 thin slices hard salami, halved

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, olives and salad dressing. Toss to coat; cover and refrigerate for 4 hours or overnight., Drain mixture, discarding marinade. For each appetizer, thread a stuffed olive, a folded pepperoni slice, a tortellini, a folded salami piece and a ripe olive on a toothpick or short skewer.

1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
3 teaspoons honey
2 teaspoons lemon juice
2 tablespoons grated Parmesan cheese
3/4 teaspoon garlic powder
1 1/2 teaspoons dried Italian seasoning
pinch of cracked red pepper flakes
pinch of black pepper
8 ounce package refrigerated cheese tortellini
4 ounces provolone cheese ((6 thin slices), cut into small squares)
50 thin slices salami
50 pimiento-stuffed green olives
toothpicks

Steps:

  • To make the dressing, put all of the ingredients into a jar with a tight-fitting lid; shake vigorously until well blended and emulsified. Taste and adjust seasonings, if necessary.
  • Cook tortellini according to package directions; drain and rinse in cold water. In a plastic ziploc bag, combine the tortellini and salad dressing; seal bag and refrigerate for 3 hours (or overnight.)
  • Drain tortellini and discard the marinade.
  • On each toothpick, thread pasta, salami (folded in half, and then in half again), and 1-2 slices of cheese, followed by an olive.
  • Serve and enjoy!

I made these for my annual Academy Awards party last year! They were a hit! A bit tedious and time consuming, but you make them the day before you serve. Not exactly sure on the actual servings, but 48 kebabs sounds about right.

1 package frozen cheese tortellini
1 package sliced pepperoni
1 jar black olives
1 jar pitted green olives
1 (8 ounce) package cheese (of your choice, I use the white pepperjack for a bit of heat)
1 bottle Italian dressing
1 box toothpick (the kind with the handles)

Steps:

  • Prepare frozen tortellini according to package directions.
  • Drain and cool.
  • Get out a plastic bowl to store the kebabs.
  • Cut your block of cheese into small cubes.
  • On each toothpick, place 1 tortellini, 1 black olive, 1 block of cheese, 1 slice of pepperoni (may cut in half or fold if too large), and 1 green olive.
  • You can vary the order in which you place the ingredients.
  • Place all of the toothpicks in the container and pour the Italian dressing over all.
  • Cover and refrigerate overnight to marinate.
  • When ready to serve, take them out of the container and lay them on a pretty lettuce lined platter.
