1 package (9 ounces) refrigerated spinach tortellini
2 cups fresh broccoli florets
1/2 large red onion, thinly sliced
1 cup canned garbanzo beans or chickpeas, rinsed and drained
1 cup canned red kidney beans, rinsed and drained
1 cup canned cannellini beans, rinsed and drained
1 can (6 ounces) pitted ripe olives, drained
1 bottle (8 ounces) fat-free Italian salad dressing
1/4 cup shredded Parmesan cheese, divided
1 teaspoon dried oregano
24 cherry tomatoes, halved

Steps:

  • Prepare tortellini according to package directions; drain and place in a serving bowl. Add broccoli, onion, beans and olives. 2 cups halved cherry tomatoes
1 14-ounce can artichoke hearts, drained and chopped

5 pepperoncini (stemmed and chopped)
2 cups fresh arugula
1 cup fresh basil (torn, plus more for garnish)

1 (12 ounce) package spinach and ricotta tortellini
1 pint grape tomatoes, halved
½ pound pitted Kalamata olives, halved

3 ounces cream cheese, softened
1/2 cup plain yogurt
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh chives
1 small garlic clove, finely chopped
salt & freshly ground black pepper, to taste
2 teaspoons salt, plus more, to taste
1 large carrot, peeled
9 ounces fresh cheese-filled tortellini (about 2 cups)
1/4 lb green beans, ends trimmed, cut into 1-inch pieces
2 tablespoons milk
fresh ground pepper, to taste

Steps:

  • Set a large pot of water on to boil according to package directions.
  • Next, make the dressing, in a small bowl, using a wooden spoon, mix together the cream cheese, yogurt, dill, chives and garlic until smooth. Season with salt and pepper. Set the dressing aside.
