- In a large skillet, heat oil over medium-high heat. Add onion and carrots; cook and stir until crisp-tender, 5-6 minutes. Add garlic; cook 1 minute longer. Transfer to a 6- or 7-qt. slow cooker. You can leave out the tomatoes if you want and you can also substitute the fresh basil for a little bit of dried basil to taste. I imagine you could add some cooked chicken too if you wanted.
