1/2 lb tortellini
4 tablespoons butter
3 tablespoons flour
1/2 cup dry white wine
2 cups cream
salt and pepper
grated parmesan cheese

Steps:

  • For the sauce:.
  • Melt butter, stir in flour and cook over low heat without browning the flour. About 5 minutes.
  • Remove mixture from heat and when it has stopped bubbling add the wine.
  • Return to heat and stir constantly until mixture comes to a boil.
  • Add cream and salt and pepper to taste.
  • Simmer stirring occasionally for about 10 minutes and taste for seasoning.
  • For the pasta:.
  • Cook the tortellini to the "al dente" stage-tender but still a little chewy.
  • Drain.
  • Serve very hot either mixed or topped with the wine sauce per your preference.
  • Top with generous amount of the grated Parmesan cheese.
  • I like to serve in individual small casserole type dishes.
  • Will also work with ravioli.

1 tsp Cayenne
1/4 cup walnuts
1-2 tbsp Sugar
1 tsp Garlic
6 large leaves + stems (used a combination of red & yellow), can substitute 1/2 package of frozen spinach
2 cup white wine
2 tbsp butter
1/3 cup flour
1 cup milk
1/2 cup grated parmesan or asiago
2 pieces of white fish
2 1/8" slices of goat cheese
1/2 package of tortellini
8 basil leaves

Steps:

tortellini 10 oz (300 g)
butter 2 tbsp (30 g)
minced garlic 2 cloves
red pepper flakes ½-1 tsp
white wine ¾ c (180 ml)
heavy cream 1 c (240 ml)
fresh spinach 2 handfuls (80 g)
grated parmesan 3 tbsp (15 g)
salt to taste

Steps:

  • Cook the tortellini according to package instructions.
  • While the tortellini are cooking, melt the butter in a saute pan over medium heat. Add the garlic and cook for two minutes.
  • Stir in the red pepper flakes.
  • Add the white wine and cook for five minutes or until the sauce has reduced by about half.

5 tablespoons flour
3 cups milk

1/8 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne pepper
1/2 cup heavy cream
1 egg yolk
1/2 cup cheese such as Gruyere or Swiss cut into small cubes
2 10-ounce packages fresh tortellini with cheese or meat filling
1/4 cup grated cheese such as Gruyere or Swiss

Steps:

  • Preheat the oven to 450 degrees.
  • Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with the whisk, and cook until sauce is thickened and smooth. Add salt, pepper, nutmeg, cayenne and cream.

1/2 teaspoon red pepper flakes
3 tablespoons fresh rosemary, minced
1 teaspoon kosher salt
1 medium vidalia onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
8 ounces cremini mushrooms, thinly sliced
1 lb swiss chard, sliced in ribbons (red, yellow, or white)
1 tablespoon better than bouillon vegetable stock base
10 cups vegetable broth
1 lb tortellini (fresh or frozen cheese or mushroom filled)
1 (15 ounce) can diced tomatoes with juice
2 tablespoons red wine vinegar
1/2 cup grated pecorino romano cheese (optional)

Steps:

  • Heat a stockpot with the olive oil. Add the pepper flakes, rosemary, salt, onion, bell pepper and garlic. Saute until the onions are just beginning to color and add the mushrooms. Saute for about five minutes or until the mushrooms are losing their liquid.
  • Add the Swiss chard and the better than bouillon and cook until the swiss chard is starting to wilt, about three or four minutes.

  • If using fresh let them cook for about 2 minutes before adding the tomatoes.

  • Turn off the heat and add the vinegar, stirring thoroughly.
  • Serve in deep bowls sprinkled with the Romano.
