Traditional jerk chicken is a true culinary delight that captures the essence of Caribbean and Jamaican cuisine. Its unique flavor profile, derived from a blend of flavorful spices, tender meat, and a smoky char, has made it a popular dish around the world. The origins of jerk chicken can be traced back to the indigenous Taino people of Jamaica, who used a technique called "jerking" to preserve meat. This method involved rubbing the meat with a spicy marinade and then smoking it over a fire. Today, jerk chicken is typically made using chicken, but it can also be made with other meats such as pork or goat. The marinade for jerk chicken is a careful blend of herbs, spices, and peppers, which give the dish its characteristic heat and flavor. The chicken is then grilled, smoked, or roasted until it reaches a tender and juicy perfection.

Steps:
- Begin by massaging chicken with the red palm oil, making sure every surface is coated.
- Place the allspice into a mortar and pulverize it; then place the thyme into the mortar and do the same. (You may use an electric coffee grinder or a food processor for this step, however your grinder should be one only used for spices otherwise the quality of your coffee may suffer.)
- Finely mince the garlic, onion, and pepper if you like it hot, then combine with the allspice and thyme. To minimize the heat remove the pith before mincing - it is the white rib of peppers not the seeds that are the hottest.
- Combine all the remaining ingredients and slather 1½ Tablespoons of the mixture over the chicken, turning it over to coat the underside as well. Set aside any remaining sauce in a covered container and refrigerate.
- Place the chicken in a glass baking dish, cover with plastic wrap (you may also use a sealable, gallon size plastic storage bag) and place into the refrigerator overnight.
- The next day, remove the baking dish with the chicken from the refrigerator approximately 45 minutes before cooking to allow the meat to reach room temperature. You can either bake or grill the chicken.

JERK CHICKEN WITH AMAZING JERK MARINADE
The best Jerk Chicken recipe with a well seasoned and flavorful Jerk Chicken Marinade. This Jerk Chicken marinade loads chicken with ton of flavor in just 30 minutes. Three reasons: 1) Marinade has consistency of paste that sticks to chicken making a flavorful seasoned skin. 2) Marinade ingredients tenderize chicken with lot of flavor from inside. 3) I pound chicken (jerk) slightly with meat-ponder to allow marination sink-in deep. Result? In 30 minutes, chicken is bursting with aroma of herbs, garlic, ginger and spices. Ready to join grill and become the ultimate "Jerk Chicken"!Jerk Chicken tends to be bit spicy. But don't worry if you are not a heat-seaker. I'm sharing details to control the heat in marinade with easy-to-find local grocery ingredients. Don't miss to read. It is you passport to Caribbean flavors from your own backyard. So, let's grill some Jerk Chicken today!Jerk ChickenJerk literally means "poke". I like to use this technique to let marinade sink deep into the chicken. Specially if you using bone-in chicken, I highly recommend slightly poking the chicken with knife at few places or use a meat-pounder to beat it slightly. This creates pockets in chicken which soak the flavor from jerk marinade deep into thickest parts of the chicken. The resulting, just short marinated grilled Jerk Chicken is so well seasoned and delicious.. you will love the flavors. Jerk Chicken Marinade:Jerk chicken is all about the marinade. A good jerk marinade will make this Jamaican chicken recipe sing with flavors. Authentic Jamaican Jerk Chicken marinade has signature flavor of two ingredients: All-Spice (it is one spice, not many spices together), and Scotch Bonnet peppers. SO, no matter what else you use, a best jerk chicken recipe starts with two ingredients: all-spice and bonnet peppers. Other Jerk chicken marinade ingredients are : thyme, ginger, garlic, scallion, lime juice, sugar, salt and black pepper. All-Spice is all you need: When making wet marinade for Jerk Chicken, I don't use other warm spices such as - cinnamon, nutmeg, cloves. All-Spice does all the work. True to it's name, it is very flavorful and has aroma of all these spices. That said, if I'm making a dry jerk spiced-rub chicken, I add more for additional depth of flavor. But that is whole new post. I hope to share in future.Scotch Bonnet is NOT Habanero: When I was working on this recipe, I was surprised to notice how every online recipe is replacing Scotch Bonnet peppers with Hebaneros. Where second is far more hot than first. A marinade with 4 habneros will be super hot. So, I use these peppers based on their heat level. Idea is to add pepper flavor yet keep the heat to medium. We eat pretty spicy food. If you don't. Don't worry! Use following chat to adjust the heat of marinade based on your preference and availability.Traditional Jerk Chicken Marinade gets heat and flavor of chilies from Scotch Bonnet Pepper. However, I seldom find Scotch Bonnet peppers in my grocery store. So, either I order online or use following substitute for bonnet pepper based on desired heat preference. Use peppers in Jerk Marinade as per the desired heat. Mild Hot: Use one jalapeno. Remove seeds and inner membrane. Medium: Use only one serrano. Remove seeds and inner membrane.Medium-high Hot: Use one serrano and 1 Habanero.Hot: Well, you don't want to go there. What to serve with Jerk Chicken?Traditionally Jerk Chicken is served with side of rice and peas. I also serve few other sides which balances the flavor of spices in Jerk Chicken. Like today I served it with rice and peas, and mango strawberry salsa. I hope you will enjoy this recipe as much as we do.Happy Cooking!-Savita

- Rub with salt and freshly ground pepper, jerk seasoning, garlic, and onion powder. Set aside while you make the marinade.
- In a food processor or blender, combine the following: thyme, green onions, garlic, ginger, habanero pepper. Pulse for about 30 seconds until blended.
- Soak the chicken with a mixture of soy sauce, brown sugar, allspice, cinnamon, nutmeg, chicken bouillon, and water or pineapple juice, and then add the blended herbs and seasonings to complete the jerk marinade. Note: You can combine and blend all the ingredients all at once, especially when making the Jerk Marinade ahead of time. No need to separate the soy sauce mixture.
- Drench the chicken with jerk marinade, place in a zip lock bag and refrigerate for at least 3 hours, preferably overnight. Try not to touch the jerk blend with your hands because it is extremely spicy hot. If possible, use gloves.
- When ready to grill, remove chicken from the jerk marinade and place on medium to high lightly oiled grill. Reserve the remaining marinade.

- In a small saucepan, simmer the remaining marinade and the one from the chicken for about 7 minutes. Serve with the chicken or mix it before serving with the plantains.

Steps:
- Wash chicken with Lime, or you can substitute with lemon juice.
- Remove all excess fat and dry with paper towels. Try to remove as much water from the chicken as possible.
- You are now ready to prepare your Jerk Sauce (Marinade) to add to your chicken.
- If you are not up to making your own marinade you can use a store bought brand of jerk seasoning like Grace Jerk seasoning.
- Add Olive oil to a skillet under a medium flame.
- Add your garlic, and scotch bonnet pepper, and allow to saute for about 4 minutes.
- Now you can add your brown sugar, cinnamon, nutmeg, and allspice,
- Stir mixture in skillet until it becomes pasty (approx 5 minutes)
- You can now remove contents from skillet and allow it to cool for about 20 minutes.
- Add the mixture to a food processor, add your thyme, ginger, white pepper, scallions, onion, soy sauce, and beef bouillon and blend for about 30 seconds. (Make sure your setting is set to pulse).
- You can add additional Scotch Bonnet Pepper(s) to suit your taste.
- Rub your chicken with your marinade (make sure you drench it to ensure maximum flavor).
- You can now place your chicken in the refrigerator in a ziplock bag or covered bowl for a few hours (I prefer to do it overnight).
- Place your chicken in a baking pan lined with aluminum foil. You can add a wire before placing the chicken in the baking pan so excess grease will drip down into the pan.
- Bake chicken for approximately 20 minutes until it is crisp and brown.
- You can then flip your chicken parts in your baking pan to do the other side. and let it bake an additional 20 minutes.
- You can use the leftover marinade, and add it to your excess grease from the baking pan and saute for about 10 minutes. (This makes for a delicious gravy and or dipping sauce)

Steps:
- Roughly chop the first six ingredients for the jerk marinade, and toss them into a food processor. Add remaining ingredients and pulse until smooth, but chunky. Reserve 1/2 cup of the sauce in the refrigerator.
- Make a series of 1/4-inch deep cuts into the chicken quarters to allow for the marinade to penetrate into the meat. Place them in a sealable plastic bag. Pour the marinade over the chicken and massage to ensure chicken is completely coated. Seal the bag and place the chicken in the refrigerator for at least 2 hours but preferably overnight.
- Light your grill and set up for two-zone cooking. While the grill is preheating, remove chicken and remaining marinade from the refrigerator and allow them to sit at room temperature for no more than 20 minutes.
- Place chicken over direct high heat and allow the skin to char but not burn. Flip and turn the chicken often until desired level of charring has happened, usually about 10 minutes.
- Slide chicken over to indirect heat and using a long silicone basting brush, glaze the chicken with remaining marinade. Close the grill lid and allow chicken to cook until the internal temperature reaches 180°-185° F, usually about 20 minutes.
- Remove chicken from the grill, garnish as desired, and serve hot. Authentic Caribbean jerk chicken is usually chopped into pieces before being served. Unless you have a heavy-duty meat cleaver this is challenging so I generally separate the leg and thigh and serve them like that, but you can serve them whole as well.
Tips:
- Use a high-quality jerk seasoning. This is the key to authentic Jamaican jerk chicken, so don't skimp on the ingredients. You can either make your own jerk seasoning blend or purchase a pre-made one. If you're making your own, be sure to use a variety of spices, including allspice, thyme, scotch bonnet peppers, and ginger.
- Marinate the chicken for at least 12 hours, or up to 24 hours. This will allow the flavors of the jerk seasoning to penetrate the chicken fully. You can marinate the chicken in a zip-top bag or a non-reactive dish.
- Cook the chicken over low heat until it is cooked through. This will help to prevent the chicken from drying out. You can cook the chicken on a grill, in a smoker, or in the oven.
- Serve the jerk chicken with your favorite sides. Some popular sides include rice and peas, coleslaw, and plantains.
Conclusion:
Jamaican jerk chicken is a delicious and flavorful dish that is perfect for any occasion. By following these tips, you can make authentic Jamaican jerk chicken that is sure to impress your friends and family. So what are you waiting for? Get cooking!
