Steps:
- 1. Sift the flour into a mixing bowl, add the salt, baking powder, mix it all together. Add the sugar and mix it with the flour mixture.
- 2. Add the olive oil, 2 beaten eggs and mix it with the dry ingredients.
- 3. Add the soy milk and mix it very well. Once you do that, add the trail mix and mix it extremely well. It should be like a cake batter, perhaps a little thicker.
- 4. Spray the muffin tin with pam and pour the mixture into each cup a little more than half full. It should make 21 muffins, so you will need two tins. Place in preheated oven at 350 degrees for thirty minutes or until done.
- 5. Serve nice and warm with butter and homemade jelly..Terrific!!!!
Tips:
- For a gluten-free option, use gluten-free flour.
- To make the muffins vegan, use a flax egg instead of a regular egg.
- Add 1/2 cup of chocolate chips, dried cranberries, or nuts to the batter for a more flavorful muffin.
- If you don't have a muffin tin, you can bake the muffins in a greased 9x13 inch baking pan for about 25 minutes, or until a toothpick inserted into the center comes out clean.
