This soup is made with leftover veggies. My kids call it garbage soup because it would have been garbage if we hadn't made soup! Throw in any type vegetables you have in your fridge to add some flavor.

1 pound lean ground beef
6 potatoes, diced
1 (14.5 ounce) can diced tomatoes
1 onion, chopped
1 cup chopped celery
1 (10.5 ounce) can beef broth
2 cups mixed vegetables
salt and pepper to taste
⅛ tablespoon dried rosemary
⅛ tablespoon dried thyme
¼ tablespoon dried basil
½ pound bacon - cooked and crumbled

Steps:

  • In a large stock pot place beef, potatoes, tomatoes, onion, celery, broth and vegetables. Add enough water to cover ingredients, cover pot and cook over medium heat for 1 hour or until vegetables are soft and beef is cooked through.
  • Season to taste with salt and pepper, rosemary, thyme and basil. Add bacon bits, stir and serve.

Notes:
1 lb. ground turkey (original recipe was for beef)
1 onion, chopped (or used minced onions and onion powder)
1 can cream of celery soup (or use cream of mushroom if your hubby doesn't hate it).
1 can corn, drained
Small brick of Velveeta, cut into cubes (or grated part-skim cheese of choice)
1 Bag Frozen Tater Tots
Use cut up ham or turkey ham instead of ground turkey.
Use other veggie of choice (frozen ok too)

Steps:

  • 1. Preheat oven to 350 degrees. 2. Brown turkey and onion together then drain. 3. Spread ,meat mixture in bottom of a casserole dish. 4. Layer soup, corn, Velveeta, and tater tots. 5. Bake for 45 minutes to an hour, until tater tots are golden brown.

1 1/2 lbs stewing beef
5 -6 carrots (1/2 inch dice)
10 ounces frozen baby lima beans
10 ounces frozen broccoli florets
1/4 cup barley
1 small zucchini (diced)
1 small yellow squash (diced)
1 (28 ounce) can diced tomatoes with juice
1 (1 1/2 ounce) package Knorr vegetable soup mix
32 ounces beef broth
11 1/2 ounces V8 vegetable juice
1 cup small shell pasta
1/4 cup olive oil

Steps:

  • Brown Beef in hot oil in pan.
  • To this add beef Broth with the Knorr soup mix, barley that has been soaked for a few hours in water.
  • Add canned tomatoes and V-8 juice to suit your taste.
  • Add vegetables longest cooking first such as the lima beans, carrots then broccoli, zucchini and squash.
  • Add pasta last. It will swell and get over cooked if you cook too long. I usually turn the soup off and add the pasta, stir and let set about ½ hour. Or you can cook the pasta of choice separate and add to individual soup bowls as you serve it. You can adjust to your personal taste by adjusting V-8, beef broth and water.

6 -7 large well scrubbed potato peels, cut peels about 1/4 inch thick
1 large onion, chopped
2 carrots, scrubbed or peeled, sliced
1 stalk celery, sliced
1 garlic clove, peeled
1 teaspoon dried parsley

1 1/2 quarts water

  • Mix all the ingredients in a large pot and simmer covered for 1 1/2 hours.
  • You may now do one of two things: A- drain off the broth and reserve for future soup-making or use as any consomme, You may freeze it as well, adjust seasoning.
  • B-Puree the veggies add back to the liquid and add any other ingredient you wish- leftover veggies, chicken, meat etc.
